Tostadas

Tostada

This qualifies as a "Fatfree Tip" rather than a real recipe. Many of you already know this, but for those of you who don't, you can make a great, almost fat-free tostada by taking an uncooked corn tortilla and crisping it in the oven for a few minutes. I baked mine at 400 F for about 5 minutes. You have to watch them carefully or they'll burn, and if you don't leave them in long enough, they'll be chewy rather than crispy. But when you get it right, they're really good--and they contain a fraction of the fat of a fried corn tortilla.

This one is topped with fat-free refried beans, lettuce, tomato, avocado, and red onion. It's a great meal when you're pressed for time, and kids love it!

are these canned beans? Did you spice them up? Yours have such a richer color than mine usually do.

Hi Erica! Actually, yes to both questions. They're beans from a can (our store brand of fatfree refried beans) but I did add some salsa to them while they were heating up. It serves to stretch the beans farther while giving them some added flavor. I also sometimes add diced tomatoes or some Rotel spicy canned tomatoes to the beans.

Hi Leslie and kaivegan--Thanks! I really only took a picture of it because it was so pretty.

And I agree about the avocado--Yum! I can eat it all by itself. Well, I have to admit I put salt on it.

Those look really good, I might suggest adding shredded lettuce as well. Also, try some pickeled jalepenos with maybe some of the juice in your refied beans for a nice flavor and some added spice.

My boyfriend has a George Forman Grill, one of those tiny plug in ones, and never uses it, so I have discovered that it is a great way to make quesadillas.

Just take your tortillas (corn or flour), put your fillings inside (I like refried beans and cheese, not being vegan, or cheese and onions and hot sauce, but you could use soy cheese or no cheese), put the whole thing in the grill, close the lid and grill for about two minutes. It will get these great brown grill lines, the tortilla crisps up nicely, and you dont have to use oil and fry them.

I have been trying to eat healthier lately and been focusing on fresh ingredients. This TOSTADA!!!!! Looks sooooo good. I just ate but I want to go make this right now. I would have never imagined how good some of this food would look. PLEASE heep up the good recipes so I can keep eating!!
