Instead of one recipe today, how about an entire book? Because I took the photos for Wild About Greens, Nava Atlas’ brilliant new cookbook, her editor was kind enough to send me several copies, and I would like to pass two of those books on to a couple of my faithful readers. So look below for details on how you can enter to win.
But first, some photos of the book:
When you take photos for a book, you never know how they’ll look; the designers crop them to fit their layout and design and sometimes even flip them so that they are mirror images of the way you actually shot them. The designers of Wild About Greens did a fantastic job of editing my photos, making them look better than I ever expected.
My photos are in a color insert in the middle of the book, but Nava’s lovely illustrations grace almost every page. One of my favorite sections is the introduction to leafy greens which gives information on 18 different types of greens.
But my very favorite page? That would have to be the title page!

I am in love with arugula at the moment as it is growing so prolifically in my garden & I adore the fresh peppery flavour .A wonderful snack/meal is simply ; arugula, fresh garlic , cherry tomatoes, sea veg sprinkle, Himalayan salt, mashed avocado & dukkah (chilli, paprika, cumin, turmeric with nuts & seeds ) with a bit of lemon juice ..to eat however you like …in a wrap, foccacia,as a dip or, as is ….divine ! 🙂

June 20, 2012 at 12:10 pmI love kale. I juice it, dehydrate it, cook it, marinate it. All delicious. But a good kale chip is hard to find, so I’d say that’s my favorite way to use the green.

June 21, 2012 at 11:11 amI love kale and arugala. Kale salads made with avocados, green onions, tomatoes, chili pepper, sea salt and pepper mixed with the hands is my go to favorite lunch. I will put arugala in everything.
We grow lots of greens, but would love some recipes for mustard greens (first time growing them this year), and chard!!

June 25, 2012 at 4:13 pmBok Choy. I love the crunchy stems and the tender greens. It goes with everything! A year ago, I couldn’t imagine a meal without meat. I’m now about a 90% vegan so learning to love greens has been a big part of my eating transformation. Thanks in part to The China Study, Eat to Live and the DVD, Forks over Knives, and great recipes from the fatfreevegan!

I love cilantro in everything. My favorite is deep fried in vegan falafel, with a tomato and cilantro salsa, or a tomatillo and cilantro verde sauce
