(Vegetable) Love is All Around
I asked for it, and I got it: 23 of the most delectably enticing dishes featuring vegetables. From asparagus to zucchini, these recipes prove that vegetables can be as romantic as chocolate truffles and champagne (though I'm not saying that your Valentine's dinner can't have all three!)All the wonderful entries are listed below in the order in which they were sent to me. These bloggers have worked hard to come up with new, creative recipes, so please visit their blogs to see the amazing dishes they've created. Then, once you've checked them all out, I hope you'll come back and vote for the one you would like to see win the contest. Wow!! How fun! You are full of surprises! I cast my vote, though it was awfully hard, everyones dishes look AMAZING! They made my heart skip a beat :)
These all look tremendous -- thanks everyone for sharing. Had the hardest time choosing: the orange vegetable soup and citrus/beet salad were top on the list and I loved how we were told how to make the soup look just as pretty as it does in the picture. Won't tell you which one made my favorite list, but I'm definitly making some of these soon.

This was really hard, and they all looked delicious, so I voted for the one that made my mouth water the most, the one I most wish I could whip up right now. Of course, if I could have a giant slice of regular, old-fashioned, unhealthy carrot cake right now, I'd probably do that, too... I think it's time for dinner.

it was hard to narrow it down to ONE, but i had to go for the Chili Love because it seems very season-appropriate and hearty enough to satisfy your special someone's hearty winter appetite. (and it's red! and spicy! and full o'nutrients!)
