This year, thirty-four bloggers stepped up to the challenge to create a romantic, vegetable Valentine's Day dish, and the results are impressive. The entries are all so creative, delicious-looking, and downright sexy that I'm certain that I could never pick a favorite.Fortunately, that's your job. Please do these contestants the honor of visiting their blogs and reading their full posts before you decide which one should be our winner. Though a picture may be worth a thousand words, it can't replace the information and inspiration you get from checking out the actual recipe. After you've looked them all over (and maybe even left a little comment love on their blogs), come back here to vote in the poll, located at the end of this post.
The top two vote-getters will receive these prizes, courtesy of Nava Atlas:

I definitely had to go for the Heart Shaped Spanakopita.
1) Vegan spanakopita is always beyond amazing. 2) Hers looks especially delicious and flaky--and made me wish that I had some right now. 3) It's in the shape of the certified vegan symbol. Come on! How much more veg love can you get?

When I think of Valentines I think of sweets - or an excuse to eat chocolate :) So I leaned more to the dessert entries - I especially thought the sweet potato truffles were inspiring!

It was so hard to choose! I especially love the red pepper soup; the tiny sour cream hearts made me smile and pepper is one of my favourite soups. I do love the sound of the sweet potato truffles... mmm! This is making me hungry. So much Vegetable Love, so little time. I may have to have a monthful of Valentine's Days so I can try all of these (I'm sure my other would not mind if I cooked a month's worth of meals for him!).

I went for the Chocolate Sweet Potato Truffles. Although I might omit the words Sweet potato from them (as a secret "health" food), I COMPLETELY love the idea that a vegetable can be found covered in delicious chocolate! I was very conflicted between the Love-ly Burgers and the Tempeh Reuben Sliders with Raw Been Slaw and Red-Wine Braised Mushrooms. Since I can't actually taste them, I had to judge based on presentation, use of material, creativity, and the "possible" taste. Based on those criteria, I have chosen the Tempeh Reuben Sliders. If I had the patience, I would totally replicate the dish. Yum!
Everything looks so good. I voted for the Messy, Hot (Sex) Jack Fruit Enchiladas. I thought it was a creative and different choice. It is refreshing to see a unique spin on vegan Mexican food that doesn't rely on beans as the dish's substance.

I had to vote for the sweet potato truffles.. so creative (and looks yummy!)... If I had to vote for just a dinner... It would've been the "lamb" curry.. that sounded, and looked, really good.

I was going to make a recipe, but ran out of time. So I thought I should at least be conscientious about my voting. I decided that the winning recipe should be good for my valentine's health, contain greens, other high nutrient veggies, little or no oil, and little or not highly processed foods. That quickly eliminated some delicious looking recipes that I'm sure are tasty, but didn't fit my qualifications. In the end I narrowed it down to the best fit, though for the topping, I would use some nut or tofu cream or some salsa and I wouldn't use wine, there is more nutrition in unprocessed grapes. This has been fun!

Having to choose one Valentine dish was not an easy feat. They each were unique and amazing looking. I chose the cashew crusted tofu with the Israeli couscous. I recently discovered Israeli Couscous and so I am a big fan of this yummy dish,
I voted for the Tempeh Reuben Slider Hearts with Raw Beets and Red-Wine Braised Mushrooms. I feel that I can be so laid back and comfortable around my partner and we don't always have to eat super fancy food, but yummy food that makes us feel good and want to cuddle afterwards. The reuben gave me that feeling of familiarity and comfort, plus the valentine's day spin on them made them extra special for Feb. 14th!

I almost chose the Celery Roses, but I just don't like celery so I can't think about it as a romantic meal. The idea, however, is wonderful and the roses are just beautiful, I wish I loved celery...
I made my decision based off of which dish I would most like someone to prepare for me on actual Valentine's Day. Some of them were such great ideas but nothing seemed quite as special as the lasagnas, which won my vote! :)

That was too hard! Loved the Beets gone Wild and the Vegan Roasted Red Pepper Pesto Pasta. In the end, I had to pick something that a celiac vegan can eat and the Vegan Roasted Red Pepper Pesto pasta won because I can substitue gluten free pasta. All of the recipes are winners in my book...they all made me hungry!

Ha, well this has to be the hardest-easiest competition entry I've done.
When I read that voters could enter a competition too, I thought, 'what a great way to take part without subjecting a load of people to the unfortunate disasters that would take place in my kitchen.... BUT WOW... never would I have thought it would be so difficult... I was vaguely hoping for a check box poll so I could select multiple entries.... So many make my mouth water just looking at them. In the end I went for the cashew crusted tofu, despite being drawn to the sweet potato truffle originally and the roasted red pepper soup... Oh wow oh wow, I'm going to have to put aside at least two weeks in order to make and try them all I think! No way can I wait for valentines each year in order to sample one of the selection!
Can't wait to see which one wins!

Ufff! It was difficult! Many delicious things! I suggest we compose a menu (or several!)out of these lovely recipes for our own V-Day dinner! I voted for Asparagus Mango Dumplings, because... well, it´s not pink, not sweet and not heart shaped! ;-) Seriously, I found it a very creative dish, with the professional look of a 5 star hotel restaurant, with enough glamour and twist to make any Valentine happy! As a dessert I propose Valentine Cake... :-)

i voted for the carrot yokan pie. what beautifully-shaped little hearts! and they looked smooth and velvetty and delicious.
I voted for the cashew crusted tofu over cous cous and kale. I love cooking on Valentine's Day, and this recipe seems like it would be perfect for two to make together. The combination of ingredients and the effort involved make it perfect for a special celebratory meal.
Oh my, everything looks SO good! I finally voted (for the smokey chard rolls), but it was a tough decision for sure!

This was a tough decision because I find the sweet potato truffles inspiring but also frightening due to the amount of oil used in them (so much empty fat and calories). If they do happen to win this contest, I definitely hope that Susan V. or some other fat free vegan extraordinaire will try making a lower-fat version of them.
