Instead of one recipe today, how about an entire book? Because I took the photos for Wild About Greens, Nava Atlas’ brilliant new cookbook, her editor was kind enough to send me several copies, and I would like to pass two of those books on to a couple of my faithful readers. So look below for details on how you can enter to win.

But first, some photos of the book:

When you take photos for a book, you never know how they’ll look; the designers crop them to fit their layout and design and sometimes even flip them so that they are mirror images of the way you actually shot them. The designers of Wild About Greens did a fantastic job of editing my photos, making them look better than I ever expected.

My photos are in a color insert in the middle of the book, but Nava’s lovely illustrations grace almost every page. One of my favorite sections is the introduction to leafy greens which gives information on 18 different types of greens.

But my very favorite page? That would have to be the title page!

Sometimes I thicken the sauce with a corn starch slurry for a thicker coating over my rice.” Congratulations, Sheila! Baby bok choy is one of my favorites, too.

    This book looks great! Preparing greens is something I need to learn more about! We love Swiss Chard around here and love to use it fresh on sandwiches or very lightly saute it with lemon and garlic.

    Kale is my favourite leafy green, particularly when lightly sauteed with garlic and some red onion and just a tiny dash of liquid smoke.

    I really like the Russian Kale, baked with salt and black pepper and a light mist of olive or grapeseed oil (not completely fat-free, I know, but very low fat)

    I love Escarole. Sauteed with some olive oil and garlic and it compliments anything Italian! 🙂

    Brussel Sprouts…..1 lb slice and saute with sliced and seeded 1-2 jalepeno and salt/cracked black pepper to taspe, 2 TBSP minced fresh garlic…olive oil for pan ….once wilted just enough sprinkle with 1/2 TBSP sugar….

    Kale! Sprayed with coconut oil, sprinked with seasoned nori flakes and baked to a crisp! Seaweed AND Kale…superfoodasaurus!!

    Kale is my go to green- smoothie, kale chips, white bean and kale soup are our favorites, and I crave vanilla Kale milk!

    I love all kinds of greens and they are the centerpiece of what I eat from green smoothies for breakfast, salads for lunch and steamed veggies or stir fry for dinner. My favorite of the moment is baby bok choy, stir fried in a lightly oiled pan with mushrooms, onions, garlic and spinach and seasoned with garlic, lite soy sauce and ginger.

    I am obsessed with Kale!! I eat a smoothie every day with 2 cups of it in there with fruit and Vega One! Would LOVE to learn other ways to eat all those good greens!

    Kale is my absolute favorite green! I put it in smoothies; saute it with onion, garlic, sesame oil, rice vinegar, tahini, soy sauce, and top it with nutritional yeast; and my favorite is a kale salad with olive oil, lemon, crushed red pepper, and garlic dressing. I’m getting hungry thinking about it!

    My favorite green leafy vegetable is swiss chard. I like to make risotto with the chopped stems, red onion and walnuts. Then blanch the leaves and fill them with the risotto and bake them in the oven as one would do with traditional cabbage rolls. They taste great served with a marinara sauce and are totally vegan.

    actually dont know if I will get booted.. its a combo of Tuscan Kale and chard sauteed in a bit of olive oil, then add chopped garlic, salt & pepper to taste, and the last few minutes a small handful of golden raisins. delish. easy. very Italian!

    My favorite leafy green (right now, it changes almost weekly!) is the little gem lettuce! So tasty in a summery salad!

    Roasted Brussel Sprouts! Garlic, olive oil, and walnuts sprinkled over Brussel Sprouts oven roasted in a cast iron skillet. sooooooooo tasty!

    “massaged Kale salad” – literally massage thinly sliced kale with lemon juice (approx 5 min till it’s soft and bright green), add diced sweet mango and toasted pumpkin seeds. Agave nectar + more lemon juice dressing best complements this amazing salad.

    Mustard greens, the spicer the better. I love to sautee them in a little coconut oil and then top sprinkle some raw dried coconut on top. Sometimes I add some red pepper when cooking. So simple and so good. Especially if you love coconut. A little raw coconut aminos drizzled on top when serving is good too.

    I love kale and use it in smoothies. I like it best with bananas, bluberries and some almond milk, a little chia too.

    I just entered on Facebook, but for variety I’ll skip the lettuce and tell you one of my favorite uses for frozen spinach, which is about the only other leafy green I know well. I love it in calzones. Now, I haven’t really made these vegan yet, and I’m still trying to get used to the idea of a tofu ricotta, and I’m not very fond of “fake” cheese so I leave that out entirely. But I think the dark green spinach against the white “ricotta” filling, served with red marinara sauce for dipping, is gorgeous. As a non-Italian, it makes me feel like I am at least getting the Italian flag colors right even if my food isn’t “authentic.”

    Kale Butter! It is just kale and toasted walnuts, tossed in a food processor until a paste is formed. I cannot get enough of this stuff!

    My favorite is probably always going to be forellenschluss speckled romaine. We grow a lot of lettuce and this one is just so darn forgiving and delicious! I enjoy it fresh, fresh, fresh so it can be the star!

    Kale!!! I like kale chips to snack, steamed kale with meals, and pureed kale in every smoothie I make! I also like that the kale in my garden survived our mild New England winter and has been producing heartily all the while!

    Congratulations on your photographic inclusion in another book! Well done! I love the idea of a whole book of recipes for greens.

    My favorite green is kale, and I enjoy it several times a week as a raw kale salad or green smoothie.

    What a gorgeous book! For a 2nd shot at possibly winning one, my new fave green veggie – Frost Shocked Collard Flowers! Yum, just got introduced to them this year 🙂 I sauteed them with coconut oil and mushrooms YUM!
