Instead of one recipe today, how about an entire book? Because I took the photos for Wild About Greens, Nava Atlas’ brilliant new cookbook, her editor was kind enough to send me several copies, and I would like to pass two of those books on to a couple of my faithful readers. So look below for details on how you can enter to win.

But first, some photos of the book:

When you take photos for a book, you never know how they’ll look; the designers crop them to fit their layout and design and sometimes even flip them so that they are mirror images of the way you actually shot them. The designers of Wild About Greens did a fantastic job of editing my photos, making them look better than I ever expected.

My photos are in a color insert in the middle of the book, but Nava’s lovely illustrations grace almost every page. One of my favorite sections is the introduction to leafy greens which gives information on 18 different types of greens.

But my very favorite page? That would have to be the title page!

Sometimes I thicken the sauce with a corn starch slurry for a thicker coating over my rice.” Congratulations, Sheila! Baby bok choy is one of my favorites, too.

    Oh, that’s a tough choice… I love kale chips, green smoothies, kale and white bean saute, collard wraps and spinach salads. It’s a tie between kale and spinach. And collards. TY!

    My favorite green of the moment? Everyone’s favorite kale!!! Right now I am loving it massaged & tossed with tahini-lemon dressing & summer veggies!

    Hi Susan,

    Well, it’s hard for me to pick a favorite green, since I LOVE all of them! But if I had to pick, I’d pick kale. Red Russian, or lacinato. Lightly steamed and put on top of a salad full of my other favorites: arugula, mustard, romaine, lovage, and bok choy tossed with a version of your vinaigrette. Then I’d sprinkle the kale with some notch and teaspoon of ground flax, and fold it into the other greens. Oh, and there’d be julienned carrots, zucchini, maybe radishes and cucumber.

    My other close second would be romaine. I love it’s crunch and strength. And how it makes a great “sandwich” with a slice of lentil loaf, or anything else. Tonight I plan to put a pan seared mushroom in a big leaf or two.

    Your photographs and Nava’s illustrations are exquisite. This book must truly be a thing of beauty. How lucky you are to have helped create it!

    Right now, my favorite green is rainbow chard steamed with a bit of coconut oil and topped with a dash of ume plum vinegar. So good!

    Kale, hands down, because it’s so versatile. I especially love it in a massaged salad with apples, sunflower kernels and avocado, with a lemon/agave dressing.

    I love Spinach. I simply brown a handful of garlic cloves in Coconut oil. I then steam and lightly sauté the spinach on top so that it is barely wilted and add sea salt and ground black pepper to taste. On occasion, I crumple some feta cheese on top. Delicious!

    Wow – what a great giveaway! This would come in handy for all the wonderful greens I’m getting from my CSA right now. I just cooked up two huge bunches of chard tonight… sauteed with a little olive oil and finished with balsamic and some sea salt. We ate them in a “big bowl” with quinoa, adzuki beans, and shitake mushrooms with a little miso/tahini sauce drizzled over the top. I guess that right now, chard is my favorite – it was delicious!

    My favorite greens are collards. And I have “invented” a new way to eat them
    so that I get a grain and extra veggie serving along with the collards. I make
    a “collard sandwich.” I use a large multi-grain wrap, place the cooked, drained collards down the center, top with some salsa and wrap the whole thing like a
    burrito! Delicious!

    My favorite leafy green is kale. I grow it in the garden and right now I have so much I couldn’t possibly eat it all! I put some in a pasta dish tonight, but also like to make kale chips (the kids LOVE them!) and kale salad with lemon vinaigrette and parmesan. I would love to learn some new recipes to make with kale and the other leafy greens I grow (chard and arugula). Thanks!

    We’re newbies at this! So far, our favorite ways to prepare greens are to throw them in a smoothie and braised bok choy. Hoping I win because as you can see, we could use a little variety in how we prepare these delicious goodies!

    Red Russian Kale is my favorite…I usually use it in place of Spinach in the Indian dish Palak Paneer.

    Our favorite here is kale, any type, from our CSA share! We saute it with garlic and have it with anything. The book looks like it would help put our CSA share to good use!

    My favorite leafy green is kale. I love to saute it with garlic and olive oil with a tiny bit of red pepper. I also love making kale chips in my dehydrator.

    Broccoli rabe — barely blanched, then sautéed with Garlic and hot pepper flakes. Mmmmmm…. I could eat it every day of the week! It’s even great leftover & used as a hoagie topping!

    My husband and I just signed up for a share in our local CSA. We picked up our first distribution last week. The produce is great, but I need a cookbook so I know how to prepare all these wonderful greens. Thanks!

    My favorite green is spinach. It would be hard for me to pick just one way I prepare it. I love it in salads with a bit of a crispier, but flavor lacking, lettuce like romaine. That way you get a lot of flavor and the crunch in the base of your salad. I love adding some spinach in my smoothie. I like spinach pasta. And just tonight I put spinach in my red beans and rice.

    Those pictures look great! Congratulations – you did an awesome job. My favorite green right now is chard (rainbow, if I can). I love it all sorts of ways – steamed, sauteed, in the frittata in Vegan Brunch. I just can’t get enough right now!

    My favorite leafy green is Chinese kale or kai lan. For those who aren’t familiar with this green, it has a thinner stalk and flowery head than broccoli, and has more leaves. It is wonderful with just about anything in a stir-fry. I have not been successful growing it myself, and the seeds are difficult to locate, but I can occasionally find it at our farmers’ market.

    My favorite green vegetable is broccoli with garlic, olive oil and tamari sauce.

    I love chard and dinasou

    It is difficult to select one green. I love chard, kale and spinach, both raw and cooked. In summer, I love to slightly sauté spinach and sprinkle with a little salt, then drizzle with balsamic vinegar plus a few sliced strawberries or blueberries. This makes a great light side dish.
    I would love to win Navas book to learn more about greens.

    I’m crazy about spinach. I eat handfuls of it raw, but I’ll also throw it in just about anything. Second in line would be kale, which I tend to marinate, massage and eat raw, though braised is delicious as well.

    Spinach is one of my favorites, and I love to steam it and add it to pasta with tomatoes and red bell peppers that have been roasted with a bit of onion, garlic, and a touch of olive oil. Throw a dash of pepper on top, and you’re all set!

    i am wild about kale. i cook it with tempeh and sweet potatoes and onions and garlic and mushrooms and tomatoes. sometimes i combine the kale with spinach or cabbage.
    i call it my one pot kale stew.

    Wild About Greens looks fabulous and it is already on my Amazon Wish List! So far I have purchased every one of the books you have reviewed since I started reading your blog about 3 months ago. And my favorite greens recipe? Simple scrambled tofu and kale from your website. I go back to it again and again. Please include me in your book give away.
