Instead of one recipe today, how about an entire book? Because I took the photos for Wild About Greens, Nava Atlas’ brilliant new cookbook, her editor was kind enough to send me several copies, and I would like to pass two of those books on to a couple of my faithful readers. So look below for details on how you can enter to win.

When you take photos for a book, you never know how they’ll look; the designers crop them to fit their layout and design and sometimes even flip them so that they are mirror images of the way you actually shot them. The designers of Wild About Greens did a fantastic job of editing my photos, making them look better than I ever expected.

My photos are in a color insert in the middle of the book, but Nava’s lovely illustrations grace almost every page. One of my favorite sections is the introduction to leafy greens which gives information on 18 different types of greens.

    I’ve been vegetarian for just one year and starting to explore a vegan lifestyle. This book looks like it would be a favorite! Steamed bok choy with lemon, mushrooms, and garlic!

    I am wild about greens! We southerners love turnip greens sauteed with red onions and a tad of minced ginger. Yum.

    I love greens, especially spinach, kale and baby bok choy and usually steam or saute or use them in soups, but these three mostly get braised Italian flavor, saute’d in a hot pan with a bit of hot oil with lots of fresh garlic and a pinch of crushed pepper flakes (and sometimes a a pinch of sugar if the greens are very bitter) then cover and lower the heat for two minutes. Sometimes I add a second step to these greens if there are any cold leftovers, by seasoning to taste like Japanese seaweed salad. I add a tsp. of low sodium soy sauce and 1 tsp. of sesame oil, and a tablespoon of rice vinegar, mix and serve cold or room temperature. I would love to win one of those greens cookbooks!

    My favorite green leafy vegetable is baby spinach. Although I love it raw in salads, my favorite thing to do is throw a huge handful of spinach into a pasta dish just before I take it to the table to be served. The wilted spinach always adds that extra special “touch” as well as those wonderful nutrients!

    My favorite is spinach, and I love to put it in just about everything! But especially in green smoothies.

    Kale, lightly steamed and added to everything–particularly as a replacement for rice in curries/stews and the like.

    I love arugula served fresh on top of hot-out-of-the-oven flat bread pizza with goat cheese and roasted grapes. Yum!

    I am in love with Kale. I love it in salads, and also braised in broth with freeze dried garlic and a little onion powder — yummy!!! Thanks for the chance to win the book!

    I love Kale…I love to dehydrate it with some hummus and water and nutritional yeast. It is so good!

    That is a tough question. I love all vegetables, but if I have to choose one will have to say Kale. Tossed with olive oil, salt and pepper, avocado onions, tomatoes and fennel.

    My favorite leafy green is spinach and I love it on top of our vegan pizza. Lightly stir-fried in some garlic and olive oil until wilted and then on top of the sauce it goes along with the other veggies. Yum!

    My family changed how we ate about 2 months ago. We always like to try new things. Thanks to the delicious recipes you have provided we are all eating much healthier. As a side benefit we have all lost weight and my diabeties is more under control. One of the staples of our lunch and dinner meals is leafy green veggies. We cook alot with kale and sometimes arugla and collard greens. The book looks like it would provide even more variety for us. Thanks for all your hard work and sharing with us.

    This time of year I love the kale, mixed with some olive oil, onions and sauteed garlic. The kale may need some flash steam tenderizing, but then it’s all mixed together in a skillet with lid and topped off with some red pepper flakes.

    I have been on a huge kale kick. I love putting it in my green smoothies and of course kale chips. I love how you can really flavor it up with so many things! Nutritional yeast for cheesy chips or cinnamon for sweet chips. Addicted!

    Sounds like an amazing book! I would love to have it. Just getting into cooking and eating greens. I have kale in my smoothie – kale, frozen mixed berries, 1/4 cup pomegranate juice, 1/2 cup nondairy milk and a banana and 1 tbs flax meal . Also love kale in a kale waldorf salad. It is made with kale, walnuts, dried cranberries or raisins. The dressing is made with walnuts, some apple and dried cranberries. The recipe can be found on the Whole Foods Market website under Kale Waldorf Salad.

    This is a tough one. I love them all. I would have to say spinach is one of my top favorites. I saute spinach with onions , garlic , yellow and red grape tomatoes. This dish looks beautiful with all those colors. It is simple , easy and yummy.

    What a lovely book and those photos just ‘pop’ from the page with vibrancy.

    My favourite green leafy vegetable – well that would have to be Kale, and I keep it simple, chop it slightly and add to the water of almost cooked pasta, then drain them together and tip into a dish containing an eg yolk and some Parmesan style veggie cheese.
    Totally simple and totally yummy.

    At the moment I’m a vegetarian but I eat vegan at least two days a week, one day I’ll get there completely.

    A favorite green of mine is Collard Greens. I roll them up and cut in 1/2 in slices, seasoned with a little vegetable broth to cover the greens, then simmer and saute until tender. After they are tender, I add coconut milk, simmer until coconut milk is dissolved. I substitute Kale often for this dish.

    It may be classic but I will always love spinach! Nothing beats some sauteed spinach with mushrooms and onions as a fast side, or as a delicious portabella stuffing.

    My Favorite leafy green is Kale. I love to chop it up and mix it together with some almonds, kalamata olives, some lemon vinaigrette and some parmesan! It is very delicious!!

    Rainbow chard because it’s so pretty! The best way I’ve prepared it was sauteed with fiddleheads, asparagus, and garlic and tossed with pasta.

    Kale is definitely my favorite. I’m especially fond of lactinado kale and love it steamed with a plate of lentils and quinoa, or raw, rubbed with a pinch of salt and some lemon juice.

    A favorite recipe I whipped up to eat while my honey drove me to the airport: Bottom layer: broth sauteed collard greens with garlic and onion. Topped with some mashed sweet potato. Then crowned with a layer of refried beans drizzled with hotsauce. It had bitter, sweet, and spice – YUM!

    my very favourite leafy green vegetable is:
    silverbeet!
    I love it in several preparations, but the one coming spontaneously in my mind to be a specially yummy one is the following:
    cut it into stripes, fry it in a pan together with chopped onions and garlic (with olive oil, sorry..), add salt and pepper, and serve with basmati-rice, together with some peanut-puree: yeah!

    I’m in! Kale, kale, and more Kale! I love kale. Steamed kale is my favorite with a little lemon juice. Kale chips is a runner up! Congrats on the photo job!

    Kale… sauteed with soy sauce, crushed red pepper, and sesame oil…. served with rice, avocado, and fried tofu. Yum!
