Instead of one recipe today, how about an entire book? Because I took the photos for Wild About Greens, Nava Atlas’ brilliant new cookbook, her editor was kind enough to send me several copies, and I would like to pass two of those books on to a couple of my faithful readers. So look below for details on how you can enter to win.
But first, some photos of the book:
When you take photos for a book, you never know how they’ll look; the designers crop them to fit their layout and design and sometimes even flip them so that they are mirror images of the way you actually shot them. The designers of Wild About Greens did a fantastic job of editing my photos, making them look better than I ever expected.
My photos are in a color insert in the middle of the book, but Nava’s lovely illustrations grace almost every page. One of my favorite sections is the introduction to leafy greens which gives information on 18 different types of greens.
But my very favorite page? That would have to be the title page!

I LOVE greens! One of my favorite recipes is Kale with Seaweed, Sesame and Ginger. I even made this for my elderly Southern parents- without mentioning the seaweed part- and they loved it! (Believe me, they would never, ever touch seaweed otherwise.)

My favorite green vegetable (and this is hard) is probably bok choy. I ALWAYS have it on hand and add it to everything. I love its crispness and its green leaves as well. And there are so many varieties.

hi! i love all dark green leafy veggies but my most frequented are spinach and kale chopped and steamed and then mixed with lemon juice, sesame seeds and a little olive oil, if im in the mood a little fig vinegar, splash!

My favorite by far is kale! I love it blended into smoothies, as a salad base, roasted for kale chips and steamed with lemon and olive oil.

My favorite green is Kale….. can’t get enough of it! I love to make Kale chips in the dehydrator, with a tahini-based lemon garlic dressing.

I try new recipes all the time, but I always find myself going back to my old stand-by: Dark leafys (collards/kale etc…) braised in a bit of vegetable broth and finished with a Braggs Liquid Aminos, a pinch of red pepper flakes and a splash of lemon juice.
Great. Now my mouth is watering….

I chose to eat a plant-based diet in 2011 and continue to expand my recipe base. I discovered arugula last summer, and added collard and beet greens, and kale this spring. All of these go well together with an easy dressing by whipping together balsamic vinegar, Dijon mustard and honey or agave nectar to balance the tart taste in the bottom of the salad bowl. I would be grateful to have a book devoted to the preparation and consumption of all that is green!

It’s hard to say its my favorite, because I truly do enjoy leafy greens, but I think the one I get the most excited about these days is kale. A grocery store near me sells a prepared kale salad that includes lightly steamed kale, a few pieces of candied ginger, dried cranberries, almond slivers and a nice light citrus dressing. It makes for a great lunch treat!

It’s so hard to choose a favorite green because I love them all. Right now, though, I am in love with the curried collard greens with red lentils, sweet potatoes, and coconut milk recipe that I developed. So today my favorite is collard greens!

This time of year my favorite greens are to grill italian broccoli and bok choy with a little sesame oil and then hot off the grill, dress them in a light homemade teriyaki sauce of soy, maple syrup and rice wine vinegar and a shot of wasabi paste. That with a little brown sushi rice, pickled ginger and grilled tofu? Awesome!!!

..I LOVE chard or kale sautéed….put a little olive oil in pan (love my cast iron)…heat…add some fresh chopped garlic….add a bunch of chard or kale…cover for a few minutes until starts to wilt..uncover, add a splash of balsamic vinegar,
about a teaspoon of sugar, a pinch of sea salt, stir, let cook a few minutes more…..delish! Even my kids like it! 🙂

My favorite leafy green vegetable is kale. I like it raw in salads (especially with avocado), sauteed with a bit of soy sauce, in soups and stews.
It’s hard to find it here (Croatia). Last winter it was available in one health food store, but only for a few months. I’m trying to get some seeds to plant it.

My favorite leafy green is actually two. I really can’t decide between them. Arugula for it’s peppery taste and delicious addition to sweet salads and kale for it’s awesome health benefits. My favorite way to eat kale is just to steam it and toss it in homemade peanut sauce. Sooo good!

This book looks lovely! Being fairly new to veganism I discovered that Kale is wonderful! Never had I taken a second look at it and having gone to culinary school you think I might have, but no. I love to dehydrate it, sauté it with onions and garlic, make an Asian inspired salad with raw kale or even cut it in a chifonade and add it to a sandwich or wrap or toss it in some white bean soup Yummy and so healthy!!

Right now kale is my favorite. I discovered it once starting to eat a plant based diet…and I must have it once or twice a week. Basically just saute it in some broth, or water for a bit…then put the lid on the skillet, and when the rest of the meal is done, the kale is perfect! it’s my go to veg! I need new ideas! Thanks!

My favorite leafy grean is spinach, especially baby spinach. I love to put it in my olive oil tuna salad wraps and eat it in a bowl drizzled with extra virgin live oil, apple cider vinegar, and top with minced raw garlic.
