Instead of one recipe today, how about an entire book? Because I took the photos for Wild About Greens, Nava Atlas’ brilliant new cookbook, her editor was kind enough to send me several copies, and I would like to pass two of those books on to a couple of my faithful readers. So look below for details on how you can enter to win.

When you take photos for a book, you never know how they’ll look; the designers crop them to fit their layout and design and sometimes even flip them so that they are mirror images of the way you actually shot them. The designers of Wild About Greens did a fantastic job of editing my photos, making them look better than I ever expected.

My photos are in a color insert in the middle of the book, but Nava’s lovely illustrations grace almost every page. One of my favorite sections is the introduction to leafy greens which gives information on 18 different types of greens.

    I really like all leafy greens but am especially in love with Kale, fresh from my garden. It cooks up in a flash, has a mild flavor and still retains a bit of texture. I just used some this weekend to top a pizza…..yum

    I love arugula. My favorite way to eat it is in a simple salad with a splash of vinegar.

    Collard greens, kale and spinach sautéed with onion , garlic , and a little EVO , or lightly steamed in veggie broth or thrown in a smoothie

    I love to cook chard from the garden with garlic, onion and a can of fire-roasted diced tomatoes. Served over brown rice it is a delicious meal.

    Any dark green mixture — my favorite is kale, mustard, and tatsoi/mizuna — water sauteed with garlic and ginger, and I sprinkle a little tamari & white wine over the top.

    My favorite leafy green vegetable right now is Kale. I’ve only started eating it for the first time this year. I have never cooked it. I have only used it in my Breville juicer and Vitamix to make juices and smoothies. I always use this or spinach to start off as a base. I know that Kale is full of so many nutrients. I’m sure I’d like it another way, but I hear it’s quite chewy, and I’m not a fan of really chewy greens. I am hoping to win this book so I can start making better meals. I am not not a good cook, but am starting to read more on Raw and Vegan choices. Kale is the base ingredient for me every morning.

    Cilantro. I love in soups, salsa, burritos, but really like to take 4 or 5 fresh sprigs and make a cup of tea. Oh, cilantro pesto.

    My favorite green veggie is a tie between Dino kale and spinach.
    Dino kale in my smoothie every morning for it’s cancer fighting properties and every afternoon I eat a huge salad with spinach as it’s base. I add green onion, mushrooms, caulflower and whatever else strikes my fancy. YUM!

    My favourite leafy green vegetable is Kale. My favourite way to prepare it is in Kale and Bean Soup, but I also enjoy it sauteed with garlic, adding a dash of balsamic vinegar at the end. Great way to get your calcium!

    Fresh endive or spinach boiled than topped with virgin olive oil, lemon, salt, & pepper.

    I LOVE spinach either raw in salads or smoothies, or cooked with garlic, nondairy milk, and cornstarch.

    Hey Susan!

    My favorite green as of late is probably spinach because of its easiness to use and versatility. As a college student, I definitely appreciate how quickly it is to prepare. Cooked, I like it best simple sauteed with garlic. and lately I like it best raw in a smoothie with banana and almond milk!

    There are six huge collard plants in my garden right now so they are my favorite green by necessity! I eat them raw, cut into thin strips with an olive oil, lemon juice, garlic and onion dressing. Yum! I would love to find it how many other ways I could make these delicious, garden-filling greens!

    What a gorgeous book, and the recipes look delicious. My favorite leafy green is collards. I love them cooked in various ways but my favorite collard recipe is Brazillian Collard Greens. Ultra thin ribbons braised in garlic, with salt and pepper. YUM!

    I haven’t tried a leafy green that I did not LOVE, though the delicate flavor of organic baby spinach is my stand by for soups, stews, smoothies, sandwiches, as well as, sauteed. It is versitile, I even went so far as to throw a handful of spinach into brownies, healthy and delicious!

    I love red leaf lettuce in a salad with sugar snap peas, bell peppers, and carrots. It’s also a great addition to a sandwich.

    I’m not the cook in my family, but I definitely love to hunt down fun recipes for my husband to make. We eat a lot of kale. Our favorite recipe so far is Red Beans over Quinoa with Kale. We found this recipe in Rip Esselstyn’s E2 Diet book. We also like to use Red Potatoes and Kale as a go-to side dish.

    I never thought I would give this up but for a chance at this cook book here it comes
    water saute a sliced onion and mushroom. Add some curry powder and cook til well coated. Add a can of low fat coconut milk. cook about five min. Add lots and lots of spinach til wilted. Serve over rice. My fav go to for comfort food.

    I love most all greens, but I would say spinach. It can be used raw in salads, steamed or cooked in so many delicious recipes that it would be hard to name just one. A great multi use green for any occaission. :~)

    I’m fairly new to the vegan community (there’s more than iceberg for salad???), so am still shyly investigating those weird-looking leaves at the granola cruncher store. When I’m stressed for time and no imagination, I fall back on SPINACH – my fav since I was three. Currently, I wilt 1/2 large tub in a pan with a few cloves of finely chopped garlic, sometimes topping it off with a wee sprinkle of vegan parmesan or two chopped calamata olives.

    Kale is my favorite leafy green vegetable. I love it sauted with onions. Since I have started eating kale I have improved my bone health.

    My favorite green is kale and the thing I like to do with it the most is put it into my smoothies! (I also like turnip greens with hot sauce!)

    I love spinach-y green smoothies to get my greens. I am just beginning the transition to vegan eating, inspired by Eat to Live. So this cookbook would be a great start to explore something besides spinach!! Thanks for blogging!

    Spinach as in the indian dish Palak Paneer, but instead of paneer I use tofu. I love the spicy, creamy richness of the spinach here.

    Greens Greens!! How to pick a favorite! I LOVE to eat Kale. It took me a while to figure out how to make it, I used to cut out the ribs, which I now leave on because when you water fry them up or soy sauce fry it up, the rib is the best part! (thanks to my 5 year old niece for that) But my favorite way to prepare Kale is to chop up some garlic and mushrooms and water fry that up with a shake or two of BRAGG organic sprinkle. Delish! Especially if you have portabella mushrooms.

    May favorite leafy green is kale. It is so versatile and full of nutrients. I like it in smoothies, salads, sauteed – pretty much any way possible. Oh kale chips are yummy too!

    hi-i’m a 16+ year stroke survivor. i love to cook! my right side is affected(i was right handed)i have cooked (in my 16+ years)for a wedding,a book launch and retreats.
