Instead of one recipe today, how about an entire book? Because I took the photos for Wild About Greens, Nava Atlas’ brilliant new cookbook, her editor was kind enough to send me several copies, and I would like to pass two of those books on to a couple of my faithful readers. So look below for details on how you can enter to win.
But first, some photos of the book:
When you take photos for a book, you never know how they’ll look; the designers crop them to fit their layout and design and sometimes even flip them so that they are mirror images of the way you actually shot them. The designers of Wild About Greens did a fantastic job of editing my photos, making them look better than I ever expected.
My photos are in a color insert in the middle of the book, but Nava’s lovely illustrations grace almost every page. One of my favorite sections is the introduction to leafy greens which gives information on 18 different types of greens.
But my very favorite page? That would have to be the title page!

My favorite leafy vegetable is guy lon. Heat up a pan, add a small amount of oil and stir fry it with chopped onions, minced garlic and ginger (add a couple T. of water half way through the cooking process). Add soy sauce to taste. Yummy!

Beet greens all the way! I’m not ashamed to walk up to people buying beets in the produce section and beg for their greens. Simple preparation is the best — braise in water or veg broth with some onion and shallots or garlic. Then throw in the roasted beets and finish with some rice vinegar. Nothing finer.

Recently, kale is my favourite. Love it raw, in smoothies or steamed and smothered in a spicy tahini sauce. I’m a big fan of spinach too and will happily eat it lightly cooked and in huge quantities 🙂

I love Bok Choy salad. I make a dressing with tahini, soy sauce and some grated onion. This often has to be thinned out a little with some water. I cut up the bok choy (can be baby or adult) into bite sized pieces and put the dressing on. Let it set for a little while and then it is ready to eat.

My favorite is spinach with sesame and soy sauce. I grind the toasted sesame seeds and add a bit of sugar (or any sweetener) and soy sauce. I parboil the spinach, squeeze it dry, cut into small pieces and then mix it all together. This works with any kind of greens.

Dinosaur Kale is my favorite! Easy to wash and chop, though all kale prep is a labor of love because it’s not quick. I love to eat it raw, either massaged with the least bit of olive oil and salt then tossed with pine nuts and dried cranberries for a simple salad, or added to other salads where the greens can marinate in the dressing for awhile to soften, OR blended with bananas and other fruit in a green smoothie. yum!

Favorite leafy green, so hard to choose! I would have to say curly Kale in a a giant kale salad (the serving bowl size, I use a big wooden oblong bowl I call my salad boat) with some kind of tahini dressing rubbed in topped with beans and lots of veggies. My go to dinner!

Kale has become my favorite. Usually I cook it with just a little liquid in the bottom of the pan, add plenty of minced garlic, throw in a good pinch of hot pepper sprinkles (to taste), and mix in just a little bit of instant broth (like chicken or vegetable). Also, garbanzo beans or butter beans are excellent additions. Another great addition is previously crispy-fried bacon, crumbled up and mixed in.

I love them all but collards are definitely a favorite. I especially love them in your Navy Bean and Collards Soup recipe. For desert I love throwing a handful of spinach or kale into a fresh fruit smoothie.

My fave leafy green is probably kale – or chard – I can’t decide. My fave prep is to chop, saute a scallion and minced garlic in some olive oil, add the chopped greens, toss and wilt, splash with some balsamic, sprinkle with gomasio and serve!

Kale or collards sauteed in a little olive oil (or water for no fat) and a chopped up banana. Or softened dried cranberries or cherries or raisins. Sweet and bitter makes it yummy.

Would love to get the book. Your photos are amazing! Lately I’m especially enamored of tofu and napa cabbage, broiled with a mustard glaze (hot mustard, agave, and optional olive oil). The glaze is also the marinade for the tofu.

Kale is my favorite green…so versatile. I love it juiced, smoothied, baked, steamed and stir fried. I put tons of it in my lentil soup and makes it all the more hearty. My favorite recipe for kale is to stir fry a few bunches in red onions, vegggie broth and garlic – simple, but a winner every single time.

Kale is my favorite because it is a nutritional powerhouse. I like to eat it in a raw kale salad but we also like kale chips and we boil or steam a bunch and then chop it up and add it to everything from pasta to burritos.

Kale!! I just made a Quinoa and Kale stuffed tomato for my mom (and dad, who didn’t know there were onions in it) because I am getting them to go Vegan for their health!! It is kale, onion, broccoli sauteed in water mixed with cooked quinoa… add a little tamari and stuff into an heirloom tomato (mom would prefer bell pepper). Super easy, SO delicious!! Normally, I use cook and puree them for my son (and put in his “green oatmeal”) and my husband and I juice them!! I would love to learn more recipes for Kale!!!

Love your website! When I needed to switch to a vegan diet last year, I got SO MUCH help from your thoughts and recipes! I can’t believe how many greens I’ve added to my diet since then, so I REALLY hope I might win one of the cookbooks! It’s hard to choose just one that I like best… kale, chard, spinach… in smoothies or steamed… collards with black-eyed peas… I guess it’s kind of fun, though, and I feel like I’m cheating the store when I buy beets – because I get the greens for “free”!
