Wild About Greens Giveaway

Wild About Greens by Nava Atlas

Thank you for the overwhelming response to this giveaway! A winner has been chosen–scroll down to the end of the post for details.

Instead of one recipe today, how about an entire book? Because I took the photos for Wild About Greens, Nava Atlas’ brilliant new cookbook, her editor was kind enough to send me several copies, and I would like to pass two of those books on to a couple of my faithful readers. So look below for details on how you can enter to win.

But first, some photos of the book:

Wild About Greens

When you take photos for a book, you never know how they’ll look; the designers crop them to fit their layout and design and sometimes even flip them so that they are mirror images of the way you actually shot them. The designers of Wild About Greens did a fantastic job of editing my photos, making them look better than I ever expected.

Wild About Greens by Nava Atlas

My photos are in a color insert in the middle of the book, but Nava’s lovely illustrations grace almost every page. One of my favorite sections is the introduction to leafy greens which gives information on 18 different types of greens.

But my very favorite page? That would have to be the title page!

For more information about the book, as well as the recipe for Nava’s Three Potato Salad with Arugula, see my earlier post.

If you would like a chance to win your own copy of Wild About Greens, all you have to do is leave a comment below telling me your favorite leafy green vegetable and how you like to prepare it. The contest will close at noon Central time on Wednesday, June 20, when I will pick a winner at random. Check back here to see if you’ve won. But wait! For a second chance to win, check my Facebook page, where I’m running a second contest simultaneously. Leave a comment on the Wild About Greens post there, and I’ll select a winner at random from those entries, too.

Update: The contest is now over. The winning comment, selected by Random.org, is number 425, by Sheila, who wrote, “I love baby bok choy stir ‘fried’ with veggie broth with shiitake mushrooms and other veggies over brown rice. Sometimes I thicken the sauce with a corn starch slurry for a thicker coating over my rice.” Congratulations, Sheila! Baby bok choy is one of my favorites, too.

Thank you for all your comments, especially for the cooking suggestions. I could cook greens all year using your ideas!

If you entered in the Facebook giveaway, be sure to check my Facebook page for the winner.

Thank you!

I love KALE sauteed in what I call a “veggie medley” — onion, scallions, carrots, corn, bell peppers, and peas. Add a dash of olive oil and salt and pepper to taste, and serve with brown rice or another grain, like buckwheat or quinoa. YUM

Kale salad is a favorite in my family. Lemon juice, garlic, little olive oil, sea salt, olives, diced red onion and sunflower seeds or toasted walnuts (sometimes diced tomato if in season or red pepper).
My mouth is watering, here in MN I’ve got to wait awhile til my kale is ready!

    Hi Susan,
I love your recipes and your blog. I’ve become very fond of kale, and my favorite way to serve it is to toss it into soup or chili near the end of cooking. That way, I can sneak more greens into my diet without a lot of extra steps.

My favorite green is spinach, and my favorite way to prepare it is an oil free version of a traditional Indian dish Aloo Palak, served with steamed basmati rice. I normally include my favorite spice mix in there from Kopan cookbook, (not a vegan book) written by Betty Jung.

Hi, actually I have 2 favorite veggies, bok choy and Brussels sprouts. I love to bake the Brussels with some garlic until they are lightly burned-so yummy! My very favorite veggie recipe is bok choy, carrots and green beans sautéed with shallots, a little broth and a little light soy sauce, yummy, yummy, yummy! Thanks for an opportunity to win a great idea cookbook.

I’ve always loved Swiss chard but have become a convert to baby kale – maybe because I can enjoy it raw as a salad green or smoothie, or cooked – delicious either way! As for “preparation,” I like to sautee it (using a Misto for a tiny spritz of olive oil) using a recipe that includes onion, raisins and almonds. Thanks for offering to share this beautiful book!

It’s hard to choose a favorite green! Last night I used Swiss chard stems for the first time, so I’m feeling particularly warm towards chard. Thanks for the chance to win! Beautiful images, congratulations!

My favorite leafy green vegetable is spinach– just like Popeye:)
My favorite way to prepare it is to saute it with garlic, I add a pinch of cayenne pepper, pinch of salt, and a drop of tamari sauce! Sometimes I top it with pecans and cranberries. Bon Appétit!

The photos are beautiful, Susan, and I’m so glad we get to enjoy your georgeous photos every day that are so, so appealing, always. Congrats to you for another cookbook that displays your awesome photos!!!

We’re all still patiently awaiting the arrival of a cookbook with recipes and photos, all done by Susan Voison. 🙂

Okay so what is my favorite green? What a difficult decision. I guess I’ll say steamed bok choy with a mint sauce, but I love your cabbage noodle soup and I just made your polenta kale recipe which I love. I don’t know that I really have a favorite. They are all so delicious. I never dreamed I’d love greens or any veggie for that matter. 🙂

    Again, Congrats!

Mmm, mmm! All that looks good enough to eat, literally. It’s hard to narrow done one favorite green, but I’d probably say kale, just stir-fried with garlic, tamari, and hot sauce. Close second: collards in a nice cold green smoothie. Not very original, so here’s hoping I win a book and get more creative ideas!

My favorite green is kale. I like to saute in water a little garlic. I add soy sauce & balsamic vinegar. Add the chopped, stemmed kale. Simmer a few minutes just until they are edible but not overly chewing. The measurements depend on how much kale I chop.

My favorite green would have to be…. Kale of course! I love the curly varieties found at most grocery stores with a thicker salad dressing massaged into every nook and cranny of each leaf. I also love the type of kale grown in my garden (Russian kale I believe). It is a bit flatter, and has less of a chew to it when its raw than most other kale types I have come across. I like to have my garden kale in a large green smoothie with blueberries, almond milk, and some frozen banana pieces. What a perfect way to start the day! Thanks for the giveaway, and it looks like you did a wonderful job on the photos!

fav green is escarole. I blanch and drain thoroughly. saute in olive oil with garlic and a few red pepper flakes, add cooked canellini beans to heat thoroughly. Salt pepper, and (not for vegans) i use good parmesan or romano cheese from the North End in Boston. That over good toasted bread is just great.
