Instead of one recipe today, how about an entire book? Because I took the photos for Wild About Greens, Nava Atlas’ brilliant new cookbook, her editor was kind enough to send me several copies, and I would like to pass two of those books on to a couple of my faithful readers. So look below for details on how you can enter to win.
But first, some photos of the book:
When you take photos for a book, you never know how they’ll look; the designers crop them to fit their layout and design and sometimes even flip them so that they are mirror images of the way you actually shot them. The designers of Wild About Greens did a fantastic job of editing my photos, making them look better than I ever expected.
My photos are in a color insert in the middle of the book, but Nava’s lovely illustrations grace almost every page. One of my favorite sections is the introduction to leafy greens which gives information on 18 different types of greens.
But my very favorite page? That would have to be the title page!

I love KALE sauteed in what I call a “veggie medley” — onion, scallions, carrots, corn, bell peppers, and peas. Add a dash of olive oil and salt and pepper to taste, and serve with brown rice or another grain, like buckwheat or quinoa. YUM

Kale salad is a favorite in my family. Lemon juice, garlic, little olive oil, sea salt, olives, diced red onion and sunflower seeds or toasted walnuts (sometimes diced tomato if in season or red pepper).
My mouth is watering, here in MN I’ve got to wait awhile til my kale is ready!

I love your recipes and your blog. I’ve become very fond of kale, and my favorite way to serve it is to toss it into soup or chili near the end of cooking. That way, I can sneak more greens into my diet without a lot of extra steps.

Hi, actually I have 2 favorite veggies, bok choy and Brussels sprouts. I love to bake the Brussels with some garlic until they are lightly burned-so yummy! My very favorite veggie recipe is bok choy, carrots and green beans sautéed with shallots, a little broth and a little light soy sauce, yummy, yummy, yummy! I’ve always loved Swiss chard but have become a convert to baby kale – maybe because I can enjoy it raw as a salad green or smoothie, or cooked – delicious either way! As for “preparation,” I like to sautee it (using a Misto for a tiny spritz of olive oil) using a recipe that includes onion, raisins and almonds. Thanks for offering to share this beautiful book!

My favorite leafy green vegetable is spinach– just like Popeye:)
My favorite way to prepare it is to saute it with garlic, I add a pinch of cayenne pepper, pinch of salt, and a drop of tamari sauce! Sometimes I top it with pecans and cranberries. Bon Appétit!

I love kale-and I love your hot skillet salad or simply steam fried w/onion, garlic and potatoes. Although, I do enjoy using bok choy with my asian inspired foods as well!

Okay so what is my favorite green? What a difficult decision. I guess I’ll say steamed bok choy with a mint sauce, but I love your cabbage noodle soup and I just made your polenta kale recipe which I love. I don’t know that I really have a favorite. They are all so delicious. I never dreamed I’d love greens or any veggie for that matter. 🙂

Mmm, mmm! All that looks good enough to eat, literally. It’s hard to narrow done one favorite green, but I’d probably say kale, just stir-fried with garlic, tamari, and hot sauce. My favorite green is Russian Kale (also called dinosaur kale, or lancinato kale. I love in “massaged” in a salad, or even in a chopped salad (chopped with other greens in my food processor)…YUM!

My favorite leafy green is spinah because it is so versatile! One of my favorite ways to prepare it is sautéed with garlic, although your Palak Tofurecipe could become my new favorite way. I made that for the first time last week and thought it was delicious!!!

My favorite green is kale. I like to saute in water a little garlic. I add soy sauce & balsamic vinegar. Add the chopped, stemmed kale. Simmer a few minutes just until they are edible but not overly chewing. The measurements depend on how much kale I chop.

Brussels sprouts! Steamed and then lightly sauteed in Toasted Sesame Oil (just a little) and umeboshi vinegar! Yum!!!

My favourite leafy green is beautiful rainbow chard. I like to water saute it with red onions and then add just a bit of balsamic vinegar. Yum!

My favorite green would have to be…. Kale of course! I love the curly varieties found at most grocery stores with a thicker salad dressing massaged into every nook and cranny of each leaf. I also love the type of kale grown in my garden (Russian kale I believe). It is a bit flatter, and has less of a chew to it when its raw than most other kale types I have come across. I like to have my garden kale in a large green smoothie with blueberries, almond milk, and some frozen banana pieces. What a perfect way to start the day! fav green is escarole. I blanch and drain thoroughly. saute in olive oil with garlic and a few red pepper flakes, add cooked canellini beans to heat thoroughly. Salt pepper, and (not for vegans) i use good parmesan or romano cheese from the North End in Boston. That over good toasted bread is just great.
