Instead of one recipe today, how about an entire book? Because I took the photos for Wild About Greens, Nava Atlas’ brilliant new cookbook, her editor was kind enough to send me several copies, and I would like to pass two of those books on to a couple of my faithful readers. So look below for details on how you can enter to win.
But first, some photos of the book:
When you take photos for a book, you never know how they’ll look; the designers crop them to fit their layout and design and sometimes even flip them so that they are mirror images of the way you actually shot them. The designers of Wild About Greens did a fantastic job of editing my photos, making them look better than I ever expected.
My photos are in a color insert in the middle of the book, but Nava’s lovely illustrations grace almost every page. One of my favorite sections is the introduction to leafy greens which gives information on 18 different types of greens.
But my very favorite page? That would have to be the title page!

Beautiful photographs, congratulations! For a while I was in love with collard greens, then I got hooked on beet greens. Now it’s the mighty, mighty kale and the sharpness it lends to pesto. So good for you, too!

Baked balsamic Kale Chips
Wash the kale. Cut out the stem. Toss in balsamic vinegar. Sprinkle with a little s&p or whatever you may feel inclined to jazz it up just a wee bit – or don’t. Bake on a silpat lined baking sheet for about 25 minutes on 350 degrees. They will dehydrate and the vinegar caramalyzes to become an all new item of perfection and bliss. My kids usually snatch them up right there and we never even have enough to store. Sometimes we use the crumbs on salads which is yummy too! Enjoy!

I love to use kale in recipes to give my family a green boost. I shred it fine in a food processor so that the kids don’t complain about the texture. Favorite recipes with shredded kale include “Many Bean Crockpot Soup” and “Corn, Kale and Sweet Potato Chowder.”

I love kale in a smoothie with mixed fruit AND a tiny leafy green called a fresh stevia leaf. I also used a five inch branch of stevia in my crock pot chili
and it makes it very sweet and rich flavr you just remove the branch right before serving

I love so many greens – collards and kale and spinach and chard and arugula as well as lettuces – but right now my favorite is bok choy. I have been making soup, not big this-is-the-meal soups, but a lighter soup to have alongside another course. I chop the leafy part of bok choy and put that into the broth first (along with mushrooms, maybe some slivers of red peppers) and then add the sliced stalks at the last, so that they stay delightfully crunchy.

Does lettuce count? My favorite lettuce ever is mache, and I don’t find it here all that often. It makes the best salad ever.

I love collard greens! They are so dense and full of flavor. My favorite is to saute onions, slivered carrots, and sliced mushrooms in water or wine, then add stewed tomatoes, corn, thinly sliced collards with the stems removed, and garbanzo beans or black beans, topping it with nutritional yeast.

I like brussels sprouts roasted in the oven, sometimes with a little barbecue sauce. Or served alongside your seitan ribz. The Mister likes kale with sesame teriyaki sauce. He eats it as a side with almost every meal.

Brussel Sprouts cut in half (lengthwise) that are par-boiled, then sauteed in coconut or macadamia nut oil. Excellent mixed with pistachios & dried apricots! YUM!

I’ve always loved arugula but fallen again in love with it. I love it in salads or adding it in to a cooked dish. It has so much flavour by itself it doesn’t need much more to it.

I love it many ways but when I have time my favourite way right now would be with vegan omelettes (made with chickpea flour!) Saute the Chard with garlic, mushrooms and asparagus for a power brunch!

My favorite vegetable is cabbage. I fry up onions and garlic first, then I add the cabbage. when the cabbage is soft I add fresh ginger and vegetable broth and vegetarian fish sauce. I cook until the gabbage is tener and add red pepper flakes at the end.

That’s a tough one! My most loved green is spinach and my favorite way to have my greens is in my smoothies! The first one I tried was from your blog (https://blog.fatfreevegan.com/2008/01/toast-2-years-and-400-posts.html)! Now I have one every day and my routine these days is spinach, ginger, dates, banana, flax seeds, blueberries and mango! It’s such a wonderful treat 🙂

Oh goodness. I absolutely love spinach, arugula, and kale. It’s actually really hard for me to pick amongst the three, you know? With spinach, you’re only a few minutes away from a filling “cream” soup or a cold refreshing salad. Kale chips are absolutely delicious, too! And I’ve been toying with a recipe for way to make a vegan arugula pesto to top pastas or pita chips!

Aloo Palak! My husband is Indian and has introduced me to so many flavorful dishes. My favorite dish with greens is aloo palak, or spinach and potatoes. We like to eat it our finger using with whole grain flat breads called roti. He makes the aloo palak and I make the roti! The only thing we leave out of standard recipes is the ghee.
My friends husband still won’t eat greens. Maybe this book is just the thing to get him on board!
