Instead of one recipe today, how about an entire book? Because I took the photos for Wild About Greens, Nava Atlas’ brilliant new cookbook, her editor was kind enough to send me several copies, and I would like to pass two of those books on to a couple of my faithful readers. So look below for details on how you can enter to win.

When you take photos for a book, you never know how they’ll look; the designers crop them to fit their layout and design and sometimes even flip them so that they are mirror images of the way you actually shot them. The designers of Wild About Greens did a fantastic job of editing my photos, making them look better than I ever expected.

My photos are in a color insert in the middle of the book, but Nava’s lovely illustrations grace almost every page. One of my favorite sections is the introduction to leafy greens which gives information on 18 different types of greens.

    Swiss Chard. A “cheese” pie is one of my favourite ways of eating them. But simply steamed is also an amazing way.

    My favorite leafy green vegetable, hmmm, tough decision. I’m going with kale, sautéed simply in olive oil with fresh garlic, salt, & pepper.

    I am addicted to bok choy!!!!!! I make a dip with tons of spices and dip my mini bok choys! I am a raw vegan, so a book like this would open my world to a brand new way of eating. I love discovering new greens to eat!

    I heart greens!! Kale is just so awesome. I just made a delicious dandelion greens, kale, apple and lemon (peel and all) tonic this weekend. Dandelion kale lemonade! 🙂

    Kale (all varieties) is my favorite, because of the nutritional value and whether it’s raw or cooked retains its flavor. I like it raw in my morning smoothly and steamed chopped stems in my beans.

    Kale is my favorite. I love to cook it in my pressure cooker ,chop and drain of course, then put a cashew sauce on it, seasoned with dehydrated onion, garlic, lemon juice ,nutritional yeast and cayenne. Yummy!

    My favorite green is kai-lan (or gai-lan or chinese broccoli). I love it simply sauteed with garlic, ginger, a splash of soy sauce, a dash of sesame oil and a squeeze of lemon. So refreshing, nourishing and delicious!

    I was using the Lacinto Kale is sautes as well as in cold dishes until I fell in love with the Red Russian Kale. I thinly slice 2 bunches of the Kale, shred a bunch of brussels sprouts, add a lemon juice, mustard, garlic dressing, finishing up with chopped almonds and a Vegan “Parmesan” cheese mix. This cold slaw is outrageously delicious.

    My family’s favorite recipe for greens is a creamy curry with Tofutti cream cheese (just a T or 2 to taste) with a good T of garam masala…so easy and so fast!
    You can make it with baby kale, chard or just good old spinach….somehow the
    mix of flavors is so exotic and yet such a comfort food. Optional items to add
    are raisins (soaked in hot water) or craisins or dates and/or chopped nuts or sesame seeds on top for a garnish! Enjoy!

    Only one? That would be collard greens. Cooked with mushrooms & onions and some kind of bean with balsamic vinegar. Quick & easy. Also love your most recent curried chickpeas and kale. Yummy.

    Definitely kale for kale chips! They were my first introduction to kale and now I make it the first introduction for all my family and friends. I make a dressing with tamari, tahini, nooch, apple cider vinegar and water and dehydrate it all. I am yet to meet a person who doesn’t drool and ask for more and I now make it as gifts for people!

    My absolute favorite are collard greens. I love them sautéed with onions, garlic, red pepper in a veggie broth! Recently, I started juicing them. .

    A difficult question! I suppose it has to be broccoli in “heavenly” sauce
    I made this up so amounts are very rough…
    Firt I cut the broccoli into florets and steam it lightly.
    The I make the sauce:
    In a little EVOO sautee 1/2 chopped onion with 3 gloves of chopped garlic and 1″ piece of chopped ginger.
    When the onions are translucent, add 1/2 tsp of ground turmeric and 1/2 tsp of ground cinnamon and 1/2 – 1 tsp of himalayan salt and a little freshly ground black pepper. Add 75g of cashews and the juice of 1/2 a lemon. Wizz everything together in a blender until smooth..add enough water to make it the consistency of thick mayo.
    Put broccoli on a plate, pour over a generous quantity of the sauce. Top with toasted almonds.
    I suppose this is one of my favourite recepies because apart from being absolutely delish, it’s full of so many things which are good for your health! The broccoli has so many amazing health giving properties, but particuarly fights against womens cancers. Then we have the turmeric (its power is enhanced by the black pepper), garlic, onion, ginger and lemon juice which all have incredible health benefits and have all been used in studies to fight cancer. I also recently read a study on cashews being used as a cure for cancer, but I add them because the nuts and broccoli in the recipe give it a huge amount of protein and healthy fats as well as ensuring that it has a low G.I.. Anyone with blood sugar levels will not only benefit from this, but also from the addition of cinnamon which is excellent when it comes to stabalizing blood sugar levels! As far as I’m concerned something which tastes as good as this and has all these healthy ingredients is almost too good to be true!

    Kale. Purple Russian Kale.

    My favorite is to take the kale and dehydrate it wit lime juice, nutritonal yeast and chili powder.

    Usually I dry sauté it in an iron skillet mixed with onion, shitake mushrooms, beans and other seasonal veggies and either mix when cooled with sauerkraut (ginger beat or garlic dill) or kimkee and then take it to work for lunch

    Spinach, any way I can get it. Love it raw in salads, in smoothies, steamed, cooked down with onions and garlic and mushrooms, in tofu scramble, on a sandwich!

    I love kale, I can use to make my favorite ravioli, my minestrone, etc.
    I think the book it is interesting and I will like tonhave it.

    Just getting started on a vegan lifestyle. Your site has been very, very helpful, and an inspiration. I’m amazed at how good everything tastes that I’ve tried so far. Up to now, I get my greens in form from salads. (Living in a small town, in northern Germany the green season is just getting started).

    I am boring – my favorite leafy green is spinach, best in a vegan curry with carrots or Hokkaido, peanut butter, yellow curry paste and coconut milk (served over rice).

    My favorite are mustard greens. I saute them in a very little olive oil and add a bit of lemon juice. Yum!

    My favorite green is KALE! I make a Green Smoothie with 4-6 cups of kale, 4-5 cups of spinach , 4 carrots, 1 cup blueberries, 1 orange, 1 apple, & about 3 cups of water. Put everything in a Vita-Mix. You have 2-32 oz smoothies! I drink 1 today & the other tomorrow!

    I love dinosaur kale more than anything (and am so sad it doesn’t exist where I live). I like it steamed with a bit of olive oil and lemon juice, and as the wrapper for summer spring rolls, and, well, pretty much however. The more of it I can taste, the better!

    Swiss chard in scrambled eggs is yummy but our all-time favorite is baked kale chips. My 3 and 5 year olds LOVE them!

    Spring greens are my favorite. I like cooking them simply – I saute onion in olive oil and then add the greens and a touch of red pepper flakes. It comes out sweet and slightly spicy and delicious!

    It’s so hard to choose! Ahead by just a leaf for me is kale. I love it in raw kale salads made with a fresh citrus dressing with carrots, beets, red onion and avocado or prepared steamed with a fabulous vegan mole sauce and black beans.

    I have soooo many favourite leafy greens. I am a vegetarian and I like ALL vegetables and I’m up to trying new things 🙂
    I love kale chips, roasted in the oven for 10 minutes with a bit of olive oil (I know, not fat free) with a sprinkle of sea salt and pepper.
    One of my favourite dishes is steamed broccoli rab tossed in orzo with garlic and hot pepper flakes 🙂
    I’m getting hungry and it’s only 5am lol.

    I am overseas working for the DOD and have to travel a lot. As airplane food is mainly inedible, one of the things I like to take along is a Swiss Chard wrap using the leaves as the wrap and filling it with humous and other fresh veggies. Yum! And a great and simple way to use greens…..

    Hands down … it’s kale. I have this wonderful kale salad recipe that I take to nearly every church potluck and rarely bring any home, except little leaf crumbs in the bottom of the bowl. I even make my own dressing to put on the salad so that I know exactly what’s in it. I’m experimenting with making some changes in the dressing to eliminate the EV olive oil.

    I love sweet potatoe, I love to have it warmed on top of home made coleslaw or warmed and stirred through brown rice and other vegtables yum yum.

    I am trying to adopt a plant based diet. The hardest part of the diet is not giving up meat, cheese or diary, it is getting the sufficient number of greens into the diet. My solution is a green smoothie first thing in the morning. That way I don’t stress about it all day, would love having the new cookbook.
