Instead of one recipe today, how about an entire book? Because I took the photos for Wild About Greens, Nava Atlas’ brilliant new cookbook, her editor was kind enough to send me several copies, and I would like to pass two of those books on to a couple of my faithful readers. So look below for details on how you can enter to win.

But first, some photos of the book:

When you take photos for a book, you never know how they’ll look; the designers crop them to fit their layout and design and sometimes even flip them so that they are mirror images of the way you actually shot them. The designers of Wild About Greens did a fantastic job of editing my photos, making them look better than I ever expected.

My photos are in a color insert in the middle of the book, but Nava’s lovely illustrations grace almost every page. One of my favorite sections is the introduction to leafy greens which gives information on 18 different types of greens.

But my very favorite page? That would have to be the title page!

Sometimes I thicken the sauce with a corn starch slurry for a thicker coating over my rice.” Congratulations, Sheila! Baby bok choy is one of my favorites, too.

    Greens pesto! Most greens will work but favorite is mix of spinach and arugula. No oil and use walnuts. Spread on anything!

    My prefered green is kale. In chips, smoothies or salads or sautés. I always love it!

    My favorite green is spinach. My favorite way of cooking any green is to add it to the pasta water in the last minute and strain it with the pasta. Yummm

    I am slightly obsessed with Kale these days. I make massaged kale salads from curly kale I get at the grocery store or raw kale salads from the red russian kale in the garden.

    I adore spinach and I like it best on home-made pizza with tomato sauce, feta and onions. But I also love swiss chard – I love to make swiss chard risotto. Or, my best invention: Chard ‘n’ Apple Pizza, which you can find here: http://musketnuss.wordpress.com/2012/02/21/chard-n-apple/

    Love Kale and spinach in morning smoothies, with blueberries, dates, cocoa powder, and almond milk. Oh and a touch of cinnamon. Yum!! I want this book, no I NEED this book ;0

    My favorite leafy green is rainbow chard because it is so pretty! I enjoy greens all sorts of ways but in a saute’ with dried cherries soaked in brandy might be my fave.

    I have to have more Kale recipies, I love it steamed or in soups, it stir frys or dehydrated with nutritional yeast, yum!

    Kale – I’d not tried it until this past year. I use it in soups & stews, smoothies, and recently baked as chips. I’m looking forward to expanding my Greens horizon.

    My favorite green is Mâché (lambs ears) prepared with a light white balsamic vinaigrette. My second favorite would be a green smoothy with baby kale, bananas, strawberries and a few cashews.

    I love to just simply slice bok choy and saute it in veggie broth with some mincedgarlic, sliced onions, julienned carrots and wrap it in either spring roll wrappers and have it cold (or while it is warm wrap it in a tortilla) with a little peanut sauce.

    Favorite green? So many to choose from!
    I guess my fav is bok choy. I like it either raw or sauteed, and then I make a sauce out of tahini, soy sauce, water, and lemon juice to drizzle over the greens. Fast, delicious, and nutritious!

    Hi Susan, the name GREENS just caught my eye and I am interested in the book. I LOVE greens, all types. My favorite is Arugula and Kale. I can eat Kale with turkey, with tomatoes, in a smoothie, or by itself!

    I make a killer spinach salad with roasted fennel and a shallot vinaigrette but I tend to wear that recipe out. I would LOVE to get some more great ideas for leafy greens!

    Im a new vegan & still learning my greens! Some old favorites & a lot of new. The ones I dont eat raw I like to steam & try to keep all the goodness in them. If for whatever reason I dont want to eat much or Im in a hurry I just juice them or blend them in a green drink with tomato,carrots or cucumber.Or whatever Im in the mood for or whats in season! LIVE FOOD = LIVE BODY ! Not my saying but still true! Great idea for a book & pictures to make you hungry for the good stuff!

    I’m glad that you were not only chosen by Nava to provide her photos, but that you’re so pleased with how they turned out in the book! I’m eager to see them for myself and we love Nava’s recipes and all manner of greens, so I’m definitely jumping on this crowded band wagon to enter your giveaway!

    Without a doubt, kale is my favorite green, and one I had never tried before becoming vegan. While I love it raw in salads, our favorite way to enjoy it is simply steamed and served with Ann Esselstyn’s delicious Walnut Dressing.

    Baby spinach! I sauté 2 thinly sliced garlic cloves and a pinch of red pepper flakes in 2 tablespoons of vegetable broth till fragrant and and then toss in the baby spinach and sauté till the spinach wilts. Sprinkle with a dash of freshly ground black pepper and serve. Fast and delicious!

    Kale Salad with Red Cabbage, Carrots, Almonds, and Avocado
    Serves 4:
    Wash, dry, and chop one large bunch of kale
    Dice avocado
    With hands, massage kale for 3 min. with: 2 Tbl. of olive oil, and one diced avocado
    Stir in: 1/4 head of julienne red cabbage, 1 grated carrot, 1/2 c. chopped almonds
    Salt and Pepper to taste
    Enjoy.

    I love kale! I like to saute it in some veggie broth with lemon juice, garlic, and salt. Then of course topping it with some nutritional yeast!

    I like all the greens, I really do, but I would have to say kale is my favorite. I like it in salads, hot dishes, or as chips.

    I love all greens in different ways – kale cooked with balsamic vinegar, nuts, and dried fruit, collard greens in Susan’s green soup, and I recently got into lettuces in breakfast salads!

    Beautiful book. I can’t wait to get a copy!! My favorite greens – kale…definitely kale. I use it in everything – large handfuls in spaghetti sauce and soups, mixed in with my salad greens, or my favorite…with a garlic tahini sauce that mimics the version sold on the Whole Foods salad bar. GO GREENS!!

    My favorite green veggie is Dinosaur Kale. I like it lightly sauted with a touch of garlic and soy sauce. YUM! I’m looking forward to checking out this cookbook; thanks for the contest!

    Wow…..Greens are my favorite!!! Raw in salads or in a pan with friends garlic
    onion, and lemon. Yum…..would love some new ideas, though.

    We all love kale in this house. My 7 yr old daughter insists on kale chips several times a week and I love a massaged kale salad, which incorporates an avacodo instead of olive oil. Kale rocks!!!

    Beet greens! I love the bitterness of them….I will throw them in my green smoothies post-workout for a nice kick and add some berries or kiwi for a sweet balance. I also love throwing them in my salads with a blend of greens such as kale, spinach, collard greens, lettuce, and bok choy. The blending of different greens brings out a ton of flavor and a great nutritional bang! Oh, and don’t forget a sprinkle of nutritional yeast! 🙂

    For me, nothing beats a massaged kale salad. I know I need to branch out, however, and this book looks like it would be the perfect one to help me incorporate more greens into my diet.

    Thank you for this chance to win! I love your blog and have read it for years.
    I like greens either steam fried with garlic and onions or just plain steamed. Both ways are then dressed with vinegar, usually rice vinegar.

    My favorite green is bok choy… especially the baby ones. I have an great asian market close to where I work and pick up bok choy weekly. I use it in stir fry… soup, salads etc.
