Instead of one recipe today, how about an entire book? Because I took the photos for Wild About Greens, Nava Atlas’ brilliant new cookbook, her editor was kind enough to send me several copies, and I would like to pass two of those books on to a couple of my faithful readers. So look below for details on how you can enter to win.
But first, some photos of the book:
When you take photos for a book, you never know how they’ll look; the designers crop them to fit their layout and design and sometimes even flip them so that they are mirror images of the way you actually shot them. The designers of Wild About Greens did a fantastic job of editing my photos, making them look better than I ever expected.
My photos are in a color insert in the middle of the book, but Nava’s lovely illustrations grace almost every page. One of my favorite sections is the introduction to leafy greens which gives information on 18 different types of greens.
But my very favorite page? That would have to be the title page!

June 19, 2012 at 7:43 amSusan, I successfully follow the ETL plan, having lost 30 lbs and maintained for six months, and must admit I am not in love with greens. I eat one big salad a day usually using some combination of spinach, arugula, romaine and shredded broccoli, and I make up the rest of my green intake with smoothies. In order to continue on my new, healthy path without becoming discontent, I desparately need green recipes to allow discovery of new favorites and preparations, particularly cooked options.

June 19, 2012 at 7:50 amMy favorite green- It is so difficult to choose. Probably turnip tops from my mother-n-laws garden. Prepared as a 3 minute saute and served with a pinch of freshly ground nutmeg, fresh pressed garlic, and a touch of kosher salt and freshly ground pepper. My other favorite green (because I can’t leave it at 1) is baby bok choy, cut on a bias, and stir fried in a cast iron pan (read HOT) with freshlu sliced ggarlic, and a spray of Bragg’s liquis aminos. Yum!

It really is the tastiest green I eat! I’d love to have some new recipes (and maybe learn to love some new greens!!)

June 19, 2012 at 8:02 amI don’t have ANY cooking imagination. So my most used greens recipe is putting kale leaves in the oven spritzed with olive oil & sprinkled with sea salt. Bake on low heat until crispy. I can’t cook ANYTHING fancier without a written recipe. A new cookbook would sure make my life easier!

It’s kale with it’s luscious green hues –esp in smoothies (mango, banana and kale is my favorite.) I love the smell of kale. I also love kale butter spread which is oh so yummy on crackers or veggies. Steam the kale for 7 min. then add 1/2 cup chopped nuts and a cup of the kale water to your blender (I use a beat up vitamixer) and blend. Let cool and it’s a great spread. This is a recipe featured in the book, ‘Forks Over Knives’ I believe.

June 19, 2012 at 8:18 amI sooooo want this book. I belong to a CSA farm and my favorite green is Swiss Chard. I usually wash it well, cut out the stems (I do something else with them!), chop up the greens and saute them in evoo with fresh garlic, salt and pepper. Near the end of cooking (which you can time to your personal preference) I like to add some vinegar – balsamic, rice, etc. I think it’s as good as ice cream!!!! June 19, 2012 at 8:24 amFor years I couldn’t get past the smell of collards boiling on the stove, let alone consider eating them. So when I decided to ‘get healthy’ I needed to find ways to cook greens. My favorite is kale because it’s versatile and comes in so many varieties. I saute a little chopped garlic, then add a parboiled cubed sweet potato and cook them together until the sweet potato is done. Then I add a bunch of rough-chopped kale, salt and pepper, cover and let the kale cook till it’s wilted. YUM! (Love your blog, Susan, and the photos in Nava’s soups and stews cookbook.)

June 19, 2012 at 8:27 amI love cabbage…….any kind! for a quick meal I will saute some with sliced onion, a couple of cloves of crushed garlic, then dump a can of tomatoes w/chiles. it is so good, over a potato – brown rice or just by itself 🙂

My Grandmother taught me that the only way to eat it is sauteed in a pool of olive oil and as much garlic as I can find. Paired with a hunk of bread or sit on top of some whole wheat penne. Not exactly healthy, or low in fat.

June 19, 2012 at 9:01 amMy favorite greens are Kale: 2 cups cooked in a little water till soft but still bright green – drain – mix well with about 1/2 t evo and about 1/2 t louisiana hot sauce. Simple, easy but soooo delicious!

June 19, 2012 at 9:11 amI like to make kale chips for snacking – toss raw kale leaves with Bragg’s or soy and sriracha sauce then bake on a wire baking rack on a low setting until crisp. Great crunch, yummy flavor.

June 19, 2012 at 9:15 amHi Susan, I’d just love to have ‘Wild About Greens’. My favorite green leafy vegetable is Swiss chard. I prepare chard in a whole variety of ways – as part of a stir-fry, in a casserole type dish, just plain steamed, in recipes, in green smoothies…. I think my favorite use of chard, however, is cooked ‘Italian style’. First steamed the chard lightly, remove from the pan, then saute a garlic clove or two (in whatever you use to saute), add the chard back and some raisins (preferably golden raisins), toss it all about – yum, yum! Beet greens are delicious: they are the very best green of all, in my opinion. But I (and everyone else) can grow much more chard; so I’m apt to have a lot more of it to work with than of either beet greens or spinach. So I give my vote to chard.

June 19, 2012 at 9:16 amI love chard! It grows so readily here in the high desert in my summer garden. I cook carrots briefly in a big pot with some orange juice, then fill the pot full of chard. Cook it down for a few minutes and top with balsamic vinegar – yumm! Love my garden and would love more great ideas for those lovely green veggies!
