Instead of one recipe today, how about an entire book? Because I took the photos for Wild About Greens, Nava Atlas’ brilliant new cookbook, her editor was kind enough to send me several copies, and I would like to pass two of those books on to a couple of my faithful readers. So look below for details on how you can enter to win.
But first, some photos of the book:
When you take photos for a book, you never know how they’ll look; the designers crop them to fit their layout and design and sometimes even flip them so that they are mirror images of the way you actually shot them. The designers of Wild About Greens did a fantastic job of editing my photos, making them look better than I ever expected.
My photos are in a color insert in the middle of the book, but Nava’s lovely illustrations grace almost every page. One of my favorite sections is the introduction to leafy greens which gives information on 18 different types of greens.
But my very favorite page? That would have to be the title page!

It’s tough to choose between collards or kale for cooking! I love collards with apple cider vinegar and red pepper flake. I like to sautee kale and add it to pasta dishes or in soups. Arugula is my favorite for salads. It’s great with white beans and pesto or tossed with roasted potatoes!

I love red dandelion greens so much that I have planted this weed in my garden. I soak them (to remove some bitterness), boil them for a few minutes, then chop them finely. Add long-cooked caramelized onions and a squeeze of lemon. This dish is even better cold out of the fridge the next day. The sweetness of the onion tames the bitterness of the greens, and the lemon brightens everything up. Sometimes I also add red chili flakes if I am in the mood for something spicy.

My favorite green veggie is probably any type of bok choy/spinach. Having learned how to cook it from my Guyanese inlaws, I brown some chopped up onion, couple cloves of garlic and throw in the greens. Add salt to taste. amazing. Serve w/rice. and if I have some shrimp available, add it in. WOW! What a great side dish, or main dish!

My favorite leafy green is kale. It’s packed with nutrition, tastes great in my morning green drinks, looks and tastes great in raw salads as well as cooked in soups, stir fries, and entrees. It’s easy to grow in my garden and the birds tend to leave it alone (they prefer to eat the tender lettuces). If I could only have one type of green (heaven forbid!) it would be kale.

My favorite green is collard greens!!!! I love collards in a green smoothie with beets, fruit, and ground flaxseed. I also love wilted collards. Take and heat olive oil, garlic, salt and pepper over medium heat till hot but not smoking. Then pour over raw collards. Wilts the collards and is SO YUMMY!!!!!

It is difficult to choose just one! I love kale for its versatility- I put it in almost everything, from sautes and stirfrys, to soups and baked kale chips! It adds wonderful flavor and texture to it all. As far as flavor and cravings go, though, I’d say arugula- in all kinds of salads and fresh by the handful!

My favourite way to have a leafy green? I have loved lettuce since I was a child, when I thought having a bowl of iceberg lettuce all to myself was a treat. (It runs in the family — my brother once asked for spinach for his birthday instead of a cake.) Now that I’m more *sophisticated* though, I think there is nothing better than steamed baby beet greens fresh out of the garden.

I love, love, LOVE kale and eat it *at least* once a day. My go-to preparation is to heat olive or cocounut oil (depending on what I’m eating it with), minced garlic, and crushed red pepper in a cast iron pan on medium-high heat. When the garlic gets sizzly and aromatic, I add chopped kale and either sea salt or Bragg’s liquid aminos (again, depending on what the kale’s accompanying) and sautee until the kale starts to get wilty. Then I lower the heat and cover it for about 5 minutes, until it’s tender and juicy. Yum!

I can’t say I really have a favorite, but the first one that popped into my head was my Raw Kale Salad. I de-stem the kale, then chop in small pieces, then I add fresh squeezed lemon juice, olive oil and sea salt and don on a pair of gloves cause I actually massage the oil and juice into the kale which tenderizes it to where you can chew it. Then I toss in some tomatoes, red bell peppers, black olive and sunflower seeds. It’s very delicious!!!

Like everyone else, I love kale. I put a handful in my breakfast smoothie, salad, burritos and soup. I love Costco ‘s big bag of organic baby kale. My daughter loves curly kale for making kae chips. Sautéing kale in broth with other greens is amazing!

From reading others’ comments, it looks like kale is the winner on favorites. I love kale, too, but at the age of 71, I’m still just a Texas girl. I dearly love turnip greens with bits of turnip. Just microwaved and served with some hot pepper sauce. Imperative to serve on New Year’s Day with the black-eyed peas and cornbread!
I have never commented before, but I thoroughly enjoy my regular emails with recipes. Mostly I just read them… I don’t cook much any more, although I enjoy it when I do. Thanks for your recipes and beautiful photographs. I’ll be checking out Amazon for that book.

Although recently I’ve been using rainbow chard in just about every possible way imaginable, my all time favorite leafy green is kale. It’s popular for a reason, I say! I like mine best smashed with a bit of avocado and gobbled up as a salad, but with kale in crunchy chip form coming in at a close second.
