Instead of one recipe today, how about an entire book? Because I took the photos for Wild About Greens, Nava Atlas’ brilliant new cookbook, her editor was kind enough to send me several copies, and I would like to pass two of those books on to a couple of my faithful readers. So look below for details on how you can enter to win.
But first, some photos of the book:
When you take photos for a book, you never know how they’ll look; the designers crop them to fit their layout and design and sometimes even flip them so that they are mirror images of the way you actually shot them. The designers of Wild About Greens did a fantastic job of editing my photos, making them look better than I ever expected.
My photos are in a color insert in the middle of the book, but Nava’s lovely illustrations grace almost every page. One of my favorite sections is the introduction to leafy greens which gives information on 18 different types of greens.
But my very favorite page? That would have to be the title page!

Kale is my favorite. My newest go to recipe is Massaged Kale Salad with Lemon Tahini Dressing. I go light on the tahini and east it in a wrap as a treat.

though i definitely love all greens, I wound up with a small laminated recipe for an amazing and simple “garlicky kale” raw salad with a tahini based dressing, that was originally from a whole foods’ “prepared food” department… it calls for “a case” of kale, and a few pounds of tahini, haha – i just scale it back, and make it as often as possible! thank you, susan!

Kale would definitely have to be my favorite leafy green. I enjoyed it in Portuguese Kale Soup growing up, but this includes chourico traditionally. Now that I no longer eat meat I enjoy it in the Fat Free Vegan North African Kale & Chickpea soup!

beautiful photos! beautiful book! i have been harvesting a variety of wonderful greens from my garden this spring so it’s hard to pick just one. i do like using a variety of different greens in green smoothies! spinach and kale are favorites. i’ve even use arugala!

I realize this will not be original, but I do really love kale. I don’t know that I have any favorite way to prepare it, but I probably consume it the most in my morning vegetable juice, I also always have a container full of kale chips in the pantry for snacking and routinely use it in soups and stews!

My husband and I LOVE kale that has been steamed with sauted onions, garlic and mushrooms. After the kale has been steamed I finish it off with the best Balsamic vinegar I can afford and eat it like crazy. It was the first thing I made after our five month medical mission trip to West Africa where we spent time taking care of poor people in Togo and living on the hospital ship. For missionaries we couldn’t complain about the lifestyle since we had air conditioning, running water and flushing toilets – but we were so tired of the food! Everything had meat in it and although we had salad it was the same lettuce, the same tomatoes and the same cucumbers every day. Most of the other vegetables were canned or way over cooked. Picking a favorite green leafy vegetable is like choosing a favorite child! I love them all – chards, bok-choy, spinach, collards, kale – you name it, I haven’t met a green I haven’t at the very least liked but I typically love them all!
I guess if I have to choose one for purposes of this contest, I would choose Kale. I have a recipe for Sweet & Savory Kale that I absolutely love. This recipe has such a nice balance, it includes onion, garlic, dijon mustard, a bit of sugar or agave, cider vinegar, vegetable broth, cranberries and it’s topped with sliced almonds. It’s a bit of heaven and perfect for the warmer seasons. It is great served alongside grilled mushrooms.
Of course, my other go to kale recipe is FFV Hot Skillet Salad – yum!! When fall rolls back around I will be making that one again.

It is a toss up between Kale and Collards for my favorite…I love them both SO much! I suppose that I will choose Collards. To fix them I sautee garlic and onions in olive oil until they are almost crisp (to simulate the bacon that saturated the dish I grew up eating in the South). I wash the greens and cut them into strips, then add them to the garlic and onion (while still wet). After a few minutes, making sure that the greens are fully coated with oil, I add some water and continue to cook them uncovered until tender, but still bright green. I serve them with hot “pepper sauce” (peppers from my garden steeped in vinegar)freshly-ground black pepper and coarsely-ground Real Salt.

We have been enjoying your site for a few months now and must say that your recipes consistently pass approval in our family of five. Our newest green is kale. Last summer a friend gave us some kale, told me how to just steam and season it and it was a great hit! This year we planted kale and rhubarb kale, just for fun! So, our recipe? Steam lightly, Becel Vegan Margarine, salt and pepper. Devine. Can hardly wait for fall.

I love all greens, I am currently growing rainbow chard in a raised bed and keep plucking the chard leaves to add to my crazy and fun flower arrangements tho… Guess you would prefer we eat them too so you can stir chard into any hot veggie soup or stir fry it briefly in a wok with some flavored olive oil, some red onions, and red peppers and whatever other veggies you like and have on hard and then serve it over a bed of farro or a wild rice mix. Don’t forget to lightly toast some pine nuts and sprinkle those over the top before serving.

Since kale is such a nutritious vegetable, we decided to use it in a “green smoothie”.
Ingredients:
In a blender (Vita-Mix) combine the following:
1 C soy milk
2-3 ripe bananas
4 heaping tablespoons of milk powder (Better Than Milk powder)
1 heaping teaspoon of carob powder
1 heaping “gob” of peanut butter
1 apple, quartered
1 packet of Stevia
1 teaspoon vanilla
3 – 4 large leaves of kale
ice to thicken and fill container.

I like greens a lot of ways–kale, broccoli, even herbs like basil and mint! I think kale chips rank pretty highly for me. I also love green smoothie and salads (included massaged kale) or just throwing greens in soups.

Kale Chips – duh!
Arugula salad with beets and blue cheese (sorry I know that’s not vegan)
Chard sauteed with garlic and lemon juice
Bok Choy sauteed with tons of garlic
Kale Slaw
And then of course any leafy green raw in salads

I grow my own garden so there is nothing better than picking your own lunch! Today mine included: 3 varieties of kale, swiss chard, various lettuces, Asian greens, arugula with herbs, cucumber, cherry tomato and a homemade raspberry vinagrette without oil. So good, I’ll think tomorrow I’ll do the same!
