Instead of one recipe today, how about an entire book? Because I took the photos for Wild About Greens, Nava Atlas’ brilliant new cookbook, her editor was kind enough to send me several copies, and I would like to pass two of those books on to a couple of my faithful readers. So look below for details on how you can enter to win.

But first, some photos of the book:

When you take photos for a book, you never know how they’ll look; the designers crop them to fit their layout and design and sometimes even flip them so that they are mirror images of the way you actually shot them. The designers of Wild About Greens did a fantastic job of editing my photos, making them look better than I ever expected.

My photos are in a color insert in the middle of the book, but Nava’s lovely illustrations grace almost every page. One of my favorite sections is the introduction to leafy greens which gives information on 18 different types of greens.

But my very favorite page? That would have to be the title page!

Sometimes I thicken the sauce with a corn starch slurry for a thicker coating over my rice.” Congratulations, Sheila! Baby bok choy is one of my favorites, too.

    I love kale! I really love adding it to soups and baking for a tasty chip-like treat but I have to say my favorite recipe called for using the kale as a stand in for basil in a pesto sauce. It was really good!

    I love kale! I saute it with olive oil, baby bok choy, red pepper, onion and garlic- then toss it on a bed of wild rice or quinoa. Healthy and so delicious!!!

    Collard greens or kale with black-eyed peas, onion, tomato sauce and tabasco sauce. Yumm!!

    A choy (http://www.evergreenseeds.com/orletchoy.html) which I typically cook very simply with garlic and a touch of oil or throw into noodle soups or soba salads.

    I love Kale! It is great when sauteed with ginger, garlic, and jalapeno (no oil–just veggie broth)!

    I love kale salad: live kale massaged and tossed with evoo, tamari, garlic, tumeric and cayenne, a little lemon or lime. And I add chopped tomotoes and chia seeds! Delish 🙂

    My favorite green is spinach. I know … it’s not exciting, but it is a green that I can eat in my salads, add to soups or bean/lentil dishes, saute for a side dish, and drink in my green smoothies. The versatility of spinach is what makes it my favorite.

    I haven’t had a green yet that I didn’t like. But I especially like Premier Kale and New Zealand spinach. The most frequent way I serve them is with the Miraculous Walnut Sauce recipe in Dr. Esselstyn’s book, p. 166. It has walnuts, garlic, tamari and water all blended up. I’ve had people who don’t like greens try them with this sauce. Their response: not bad. But I say delicious!

    Besides loving my spinach raw in a salad, I love to steam kale in a pot with lots of garlic, some mustard, and red pepper flakes! 🙂

    Hi Susan,
    I love your blog and recommend it to my students. Your photos look beautiful. Congrats! Can’t wait to see the new book! Kale is one of my faves, along with arugula. I love kale in many ways – one is Kale Salad with my creamy ranch dressing or peanut dressing. I also love kale in smoothies as well as kale chips. Mmmm! I’m getting hungry just thinking about it!
    Thanks for your awesome website! Now, when are you going to write a book with all of your own fantastic recipes???

    Collards! The best way I’ve ever had them was in your recipe for Spicy Collards and Black Eyed Pea soup. My mouth waters thinking about it. I also love them raw as wrap with hummus, tomatoes, and sprouts. Yummm.

    I keep it really simple and love to sautee EVOO, garlic and kale. A touch of salt is always nice too. The garlic makes the dish, so you could probably sub water for the oil, and it would be fine.

    I’ve recently found mixed baby kales at my organic market. The leaves are fabulous straight out of the container and into my mouth – or lightly steamed. So delicious!

    Fresh young kale….Make a salad with fresh kale (remove the largest stems and tear into small bite size pieces), mango chopped, blueberries, red onion quartered and sliced, crumbled goat cheese (or not if you want it to be vegan) and toasted sesame seeds. Dress with citrus viniagrette. So simple and such a hit. There is never any left over. For variety add fresh cabbage, chopped, fresh swiss chard or any other greens you would like. You can only make this salad better with more and more greens. (I rtired to commnet on face book but the page would not accept any more comments)

    I would have to say that right now my favorite green veggie is Beet greens.. I know it is cheating a little but I love the fact that when you buy Beets you get a Two for one deal. Delicious Greens and powerhouse jewels that brighten up any salad.

    Book looks fantastic, but OMG(oodness) how to choose just one? I adore the nutty taste of Arugula in salads and pesto, but then there’s Mizuna that grows all winter long .. And truth be told it’s the herbs (aka weeds) that will always be the love of my green life, so I guess I’d have to pick some nutritious and delicious Parsley which I love in my morning green juice, in salads, or mashed with raw garlic & salt to store in the fridge and a teaspoon added to a cup of hot water whenever I need a warming cup of soap .. Of course I use Dandelions in the same way, but yes I must pick Parsley as my favourite, simply because I use a little (and yes ‘just’ a little) more of it 😀

    Bok Choy — thinly sliced in a Thai coleslaw with red cabbage, bell peppers, red onions and carrots. Dressing has Bragg’s, rice vinegar, ginger, garlic, orange juice. This is delicious cold as a side salad, or stuffed in an Ezek wrap, or hot served on top of brown rice. Sprinkle toasted sesame seeds on top of all. YUM! =)

    kale, romaine, arugula, and collards –sautee with garlic, a litle s & p, puree as base for any saag Indian dish… DELISH.

    Kale Chips!!!!! Slice off the leaves from the stem, wash them and chop them into large pcs. Lay them on a cookie sheet, drizzle with olive oil and spices, bake at 350, turning after about 7 minutes, until they are crispy. A sure way to get kids to eat this power veggie!!!!! Oh yeah…I have to throw one more in….steamed kale leaves chopped finely and added to mashed potatoes…great for babies and finicky eaters!

    I just made my own version of the arugula/potato salad for a potluck last weekend and it got rave reviews. I tossed bite-sized chopped and boiled potatoes (with skins), chopped kalamata olives, chopped roasted walnuts, small plum tomatoes and sliced red onions in a red wine viniagrette and scooped it into bowl lined with a bed of arugula. YUM!

    Kale is currently my favorite green! I put it in salads with romaine and lots of other veggies, lightly dressed. It’s also great gently cooked in Miso soup (instead of or in addition to seaweed); it’s great in veggie, soups, stews, curry, you name it! Cooked or raw, kale’s the bomb!

    We love and eat all green veggies 🙂 My kids have nosebleeds often so I seek especially seek veggies with high amounts of vitamin K for them to munch on!!!!!

    Rainbow chard, I love it because it is so pretty and tastes good, I almost always make it in my vegan Louisiana Sausage and Greens recipe, with a side of sweet cornbread of course 🙂

    Kale is my favorite leafy green veggie. I pick it fresh, cut it up, sautee it with just a little butter and sprinkle in some red pepper flakes for flavor.

    I love kale and I use it in my smoothies every morning! I have a favorite smoothie that involves kale, pumpkin, soy milk, bananas and cinnamon. Yum!
