Instead of one recipe today, how about an entire book? Because I took the photos for Wild About Greens, Nava Atlas’ brilliant new cookbook, her editor was kind enough to send me several copies, and I would like to pass two of those books on to a couple of my faithful readers. So look below for details on how you can enter to win.
But first, some photos of the book:
When you take photos for a book, you never know how they’ll look; the designers crop them to fit their layout and design and sometimes even flip them so that they are mirror images of the way you actually shot them. The designers of Wild About Greens did a fantastic job of editing my photos, making them look better than I ever expected.
My photos are in a color insert in the middle of the book, but Nava’s lovely illustrations grace almost every page. One of my favorite sections is the introduction to leafy greens which gives information on 18 different types of greens.
But my very favorite page? That would have to be the title page!

June 18, 2012 at 3:16 pmSince going back to a vegan diet about a month ago, I am rediscovering my love of greens. My favorites now are kale and romaine. I love to make kale smoothies and the romaine I use in a big salad with chick peas, apple slices, sprouts, cucumber and a dressing made in the Vitamix of sunflower seeds, garlic, water and whatever lovely fruit vinegar I am in the mood for–last night it was blueberry. Makes a very filling and tasty salad.

Favorite way to have kale is as a kale chip, naturally.
Favorite way to have spinach is either steamed or raw in smoothies!

My green journey started with Collard greens and your wonderful soup recipe. I have since had kale in my salads which I really like but to be truthful greens still kind of scare me.

I boil them for about 10 minutes, drain them well, and then add one whole raw crushed clove of garlic, the juice of one lemon, and some sea salt and pepper. Voila! Easy and delicious! (P.S. I used to use a bit of olive oil in this recipe, but they are just as delicious without it!)

June 18, 2012 at 3:22 pmMy husband cooks up mustard and turnip greens southern style. While not quite fat-free, we usually add a little coconut oil and liquid smoke to substitute for the pork fat that is traditionally added. The cooking liquid makes for a great veggie broth for making seitan later.

June 18, 2012 at 3:25 pmI love kale! My favorite is to make kale chips in the oven (a light spray of safflower oil and a sprinkling of garlic powder, sesame seeds, and cracked pepper). However, my favorite greens recipe isn’t just one green- I love to combine kale, spinach and chard and make non-dairy non-soy “creamed” greens! Saute up some shallots and garlic and do a quick blanch on the greens. Squeeze the the water out of the greens the puree them in a food processor. Saute some more raw greens in the pan, then add the puree, shallots, garlic and the oil of your choice (I like safflower or flaxseed).

June 18, 2012 at 3:25 pmI LOVE spinach! I have ever since I was a kid. I think it has a great texture and taste just steamed alone and I frequently add it to various dishes and soups. One of my favorite dishes where it’s the main player is spinach casserole, a dish my mom used to make. It’s basically just steamed chopped spinach and onions baked with crumbled croutons and mozzarella cheese melted on top. I like Daiya mozzarella! Another great one is a recipe I found long ago: steamed spinach bundles with orange pistachio dressing–SO good!
I’m excited for a chance to win a book that would help me incorporate more greens into my daily diet! Greens make me feel so much better. Most people don’t eat nearly enough of them these days!
