Instead of one recipe today, how about an entire book? Because I took the photos for Wild About Greens, Nava Atlas’ brilliant new cookbook, her editor was kind enough to send me several copies, and I would like to pass two of those books on to a couple of my faithful readers. So look below for details on how you can enter to win.

But first, some photos of the book:

When you take photos for a book, you never know how they’ll look; the designers crop them to fit their layout and design and sometimes even flip them so that they are mirror images of the way you actually shot them. The designers of Wild About Greens did a fantastic job of editing my photos, making them look better than I ever expected.

My photos are in a color insert in the middle of the book, but Nava’s lovely illustrations grace almost every page. One of my favorite sections is the introduction to leafy greens which gives information on 18 different types of greens.

But my very favorite page? That would have to be the title page!

    I love salads and grilled veggies best of all. Gradually getting the hubby on board with more veggies as well. My plan is to be 90/10.

    i love massaged kale salads – with a dash (very small dash!) of coconut oil, a squirt of braggs, a bit of ACV & a sprinkle of nooch. heaven! it’s dinner tonight, topped with tomatos and tempeh crumbles.

    Since going back to a vegan diet about a month ago, I am rediscovering my love of greens. My favorites now are kale and romaine. I love to make kale smoothies and the romaine I use in a big salad with chick peas, apple slices, sprouts, cucumber and a dressing made in the Vitamix of sunflower seeds, garlic, water and whatever lovely fruit vinegar I am in the mood for–last night it was blueberry. Makes a very filling and tasty salad.

    I would love to win a copy of this! I am a HUGE fan of Nava’s cookbooks. I can only imagine this one will be equally wonderful. As leafy greens go, I love them all, but have a special place in my heart for kale – raw, crispy, sauteed, any way!

    kale, hands down is my favorite – though it’s hard to say if i prefer rubbed kale salad or kale chips in nootch and apple vinegar… and of course there is chard in the frittata from vegan brunch… oh dear… i can’t decide!

    I’d have to say my favorite leafy green is kale! It’s really a toss between kale and spinach but I always cook kale more often.

    Favorite way to have kale is as a kale chip, naturally.
    Favorite way to have spinach is either steamed or raw in smoothies!

    I’m kind of new to greens. (I put it down to coming from England and was never exposed to them except for cabbage}. My green journey started with Collard greens and your wonderful soup recipe. I have since had kale in my salads which I really like but to be truthful greens still kind of scare me.

    Spinach is my favorite! I like to steam it then refrigerate it. Cold cooked spinach is amazing with tahini and lemon!

    Your photos are beautiful. I love cookbooks with photos. Kale is my favorite green. I have a kale, blueberry, banana, pomegranite smoothie for breakfast every day.

    Kale! I love to saute it in a little bit of olive oil and add some minced garlic about 30 seconds before it’s done cooking. I could eat this every day!

    My favorite greens are dandelion leaves!! I boil them for about 10 minutes, drain them well, and then add one whole raw crushed clove of garlic, the juice of one lemon, and some sea salt and pepper. Voila! Easy and delicious! (P.S. I used to use a bit of olive oil in this recipe, but they are just as delicious without it!)

    My husband cooks up mustard and turnip greens southern style. While not quite fat-free, we usually add a little coconut oil and liquid smoke to substitute for the pork fat that is traditionally added. The cooking liquid makes for a great veggie broth for making seitan later.

    My favorite leafy green is kale. I love to saute it with garlic and olive oil, and then make nests in the pan to cook eggs over easy in.

    I’m a total novice with greens. I want to learn how to cook them and incorporate them into our diets. At the moment I don’t have a favorite as I like them all!

    Nothing’s better than kale, and no kale recipe is better than massaged kale salad with olive oil, lemon juice, garlic, and avocado!

    I love kale! My favorite is to make kale chips in the oven (a light spray of safflower oil and a sprinkling of garlic powder, sesame seeds, and cracked pepper). However, my favorite greens recipe isn’t just one green- I love to combine kale, spinach and chard and make non-dairy non-soy “creamed” greens! Saute up some shallots and garlic and do a quick blanch on the greens. Squeeze the the water out of the greens the puree them in a food processor. Saute some more raw greens in the pan, then add the puree, shallots, garlic and the oil of your choice (I like safflower or flaxseed).

    I LOVE spinach! I have ever since I was a kid. I think it has a great texture and taste just steamed alone and I frequently add it to various dishes and soups. One of my favorite dishes where it’s the main player is spinach casserole, a dish my mom used to make. It’s basically just steamed chopped spinach and onions baked with crumbled croutons and mozzarella cheese melted on top. I like Daiya mozzarella! Another great one is a recipe I found long ago: steamed spinach bundles with orange pistachio dressing–SO good!

    I’m excited for a chance to win a book that would help me incorporate more greens into my daily diet! Greens make me feel so much better. Most people don’t eat nearly enough of them these days!

    Kale has quickly become my favorite leafy green for it’s unsuspecting versatility. I love it as baked chips, pan wilted, and now massaged salads! I’d love to see what other ideas this cookbook would have.

    I love using kale for a salad with apples and sunflower seeds with an oil free tahina dressing from whole foods!

    Spinach is my absolute favorite green! I like to saute it in blood orange olive oil, with a dash of sea salt. That can be a whole dinner right there!

    Collards! Saute lightly in veg. broth til wilted…..cover with red onions, garlic, and red pepper flakes also sauted in veg. broth…..serve with pepper vinegar.

    Butter lettuce and radiccio salad with beets and pecans. I just tried grilling turnip greens with lemon juice and some garlip and seasoning in foil..very nice.

    I love swiss chard! I make a one skillet meal with chard, gnocchi, tomtoes & white beans. YUM!

    I started making a kale salad that I am now in love with! All I do is remove the stems, rub the leaves with avocado, and squirt with lemon juice. It’s so yummy! 🙂

    My favorite leafy green is kale. I love to stir fry it with tofu, mushrooms and a sprinkling of nutrional yeast on top! Delicious!

    I don’t know how I lived 26 years w/out KALE!! I love it raw, steamed, in smoothies, etc. One of my most favorite kale-based meals is this “creamed” style: http://www.hungryhungryhippie.com/kale-is-the-new-spinach/

    Kale! Steamed (alone or with other leafy greens), then topped with coconut oil, sea salt and cayenne pepper and hearty dose of nutritional yeast. Sooooo yummy!

    I would looove to win this cookbook — always on teh look-out for new ways to try prepare greens and new ones to try!
