Instead of one recipe today, how about an entire book? Because I took the photos for Wild About Greens, Nava Atlas’ brilliant new cookbook, her editor was kind enough to send me several copies, and I would like to pass two of those books on to a couple of my faithful readers. So look below for details on how you can enter to win.

When you take photos for a book, you never know how they’ll look; the designers crop them to fit their layout and design and sometimes even flip them so that they are mirror images of the way you actually shot them. The designers of Wild About Greens did a fantastic job of editing my photos, making them look better than I ever expected.
My photos are in a color insert in the middle of the book, but Nava’s lovely illustrations grace almost every page. One of my favorite sections is the introduction to leafy greens which gives information on 18 different types of greens.
But my very favorite page? That would have to be the title page!

My favorite green is stinging nettle. I tasted these after purchasing some at the San Francisco farmers market and they just felt sooooo good inside me!!!

My favorite green is lacinato kale, partly for it’s unique look, texture & taste,but probably more so because my 4-year old loves that it’s called “Dinosaur Kale!” We use it as our “bread” on mock tuna salad (made with chic peas), and other such dishes.

Arugula is my favorite salad green. Drizzle with a tiny bit of macadanian nut oil, spritz with Braggs Liquid Aminos, top with some hemp seeds & chopped brazil nuts. Looks like a lovely book, Susan. Congratulations!

Kale and cilantro smoothies with pineapple, a big dash of cinnamon, vanilla extract, hemp protein powder and a big scoop of chia seeds (and any other green veggies I might have lying around e.g. cucumber, celery, spinach..etc) are my favorite way of starting off the morning! I am also a fiend for kale sautéed in veggie broth, garlic, onion, and red pepper flakes! 😀

Too difficult to choose one favorite! Kale is what gets thrown into almost any soup or stew here. Raw spinach tends to be the base of our salads, as well as a topping on vegan garlic fingers. Bok choy is awesome in stir-fries and brothy Asian soups with loads of garlic, ginger, and a touch of sesame oil. I love them all! 🙂

Spinach, and lots of it! I very rarely cook anything since I like to be as raw as possible, and since I don’t handle raw kale so well spinach is now my go-to veggie. I love the crunch of just eating a handful, and one of my favorite ways to prepare is to, well… just eat a handful out of the bag, fresh from the Farmers Market.
But my favorite meal is a spinach salad with tomatoes, black beans, fresh salsa, nutritional yeast + dash of Braggs, homemade tortilla chips, and any other veggies on hand. Yum!

I would love to have a copy of Wild About Greens, because I have just started to follow Dr. Joel Fuhrman who is all about greens. I have had a very bad diet over the past 25 years and I’m on a mission to change that and I think this cookbook would help totally. My very favorite green right now is spinach. I know it is so healthy and taste good too. I am afraid of Kale but I have put it into soups. I think this cookbook might change my mind about Kale. Nettles are my favourites. I mix the young tops with brasilnuts, nutr. yeast , a little bit of oil, sunflowerseeds, dried tomatoes, garlic , salt and pepper in a foodprocessor and serve it on crackers or bread.

I have been reading your blog for quite some time now, and i always find something to enjoy. We are not necessarily Vegan, but i try to throw in one of the recipes from your site at least once or twice a week and they love it! I love spinach! I put it in all sorts of things and cook it a variety of ways. In salads, sauteed with a little garlic and oil. Thrown in an omlette or quiche. It is a very versatile green that doesn’t last long in my fridge!

Kale kale kale! I love raw kale salads, in all forms. My current fixation is kale (and beet greens, b/c I had them!), massaged w/ a simple dressing of tahini and ACV, tossed with steamed beets and pecans. YUM YUM YUM.

I eat many, many vegetables, especially greens. My favorite green is Kale. I love to make Sweet and Savory Kale, the recipe on the Nature’s Green bag, and your recipe for North African Chickpea and Kale soup. My favorite way to serve Kale is to spice it up with your Curried Chick pea and Kale recipe. I have never cooked with garam masala until I started following your blog 2 years ago and now it is one of my families favorite spices! This recipe is also a favorite at work. I am always asked to bring it when the Nurses have a party.

My favorite leafy green vegetable is probably spinach. I like to stuff spinache in a cabbage leaf with hummus, bragg’s rasberry dressing, beansprouts and red pepper, so yummy!

My fave wild green veg has got to be nettles! They are such a challenge to pick, but you can steam them, or put them in soups, or even juice them. Or havest for tea making. They are only available for part of the year, as they get too tough once summer comes. I see them in spring and look forward to them growing abit bigger so I can start harvesting. They are full of minerals, and other goodies.

My favorite green would have to be kale!! Although I use it as much as I can, my favorite ‘treat’ to make with it is Kale Chips. Very simple to do, just massage some clean kale with a good quality olive oil and season to your taste. sometimes that’s just a little salt, pepper and garlic cloves or powder, other times it can be a sprinkle of Romano or parmigiana cheeses and pepper, and cayenne give a nice bite too!!
Arrange the kale on a cookie sheet (without over crowding) in your preheated 300 degree oven and keep a close eye on it. shake it often to cook evenly! when it sounds like ‘shh shh shhh’ when shaking, that’s a good indicator it is done. yumola!! Enjoy! And congrats on your book!! @llison

Swiss Chard!! I love to make vegan whole wheat swiss chard flatbread pizza. Wilt the chard first using a little olive oil. Add the ubiquitous pine nuts and raisins, if you like. Divvy up onto your pizza dough rounds and quickly bake in a very hot oven.Yummmmmm!

Bok choy appears on my table at least once a week. My parents clash over what is both the most practical and delicious way to prepare it, and I have to side with my mom on this one: stir-fried and mixed with tofu, with a simple sauce of soy sauce, a sweetener, and corn starch. Oh, and don’t forget the garlic. That’s added to the bok choy as it’s stir-fried, and adds a crucial touch of savory to this dish. I know it’s a rather vague description of one of my favorite foods, but that’s how my mom’s done it for years.

Hi…this book looks terrific…My favorite way to prepare greens is so simple although I have been using a bit of olive oil. I could just as well skip that, I suppose.. ..I heat a clove or 2 of minced garlic in maybe a couple teaspoons of light olive oil (I know it’s not lighter in calories, but I don’t like the heavy taste of regular olive oil)….then I top that with a bunch of chard or kale that I’ve torn into biggish pieces…add a bit of water, put a lid on and steam til it tastes done…I also add a bit of tamari. Yum.

Spinach. I put it in the bottom of the strainer, drain the pasta over it and then put both of them in a pan with mushrooms, lemon and capers to combine.

I love wilted kale salad. Massage vinegar of your choice (Bragg’s or balsamic for me), olive oil and salt into kale, let sit for several hours. Then eat!

The first crush of my life was on Popeye! So, since early childhood, I have adored spinach. My favorite is palak paneer (leave out the “paneer” or make a vegan version). But I eat spinach daily in everything–salads, soups, sandwiches, casseroles. “I luvs me greens!”

Broccoli is probably my favourite green – does it count as leafy? Fresh crunchy broccoli slaw, broccoli and walnut pesto on pasta, broccoli stir-fried with garlic and soya sauce… broccoli does it all!

Obviously, my favorite green would be mustard greens. It is interesting to me because I used to hate them until I moved to Tennessee to go to college. Somewhere during my sophomore year, I decided to try eating them again-in a really simple preparation. All I do is rip apart the leaves, place them in a steamer, sprinkle a little “McKay’s vegan chicken seasoning” on top and place the lid. For some reason, the greens turn out succulent and delicious, with just a hint of chickeny (if that’s a word) flavor. By far the easiest and most delicious preparation that I have had to date. By the way, this cook-book looks amazing! Pick me! Pick me!

Such a difficult choice as I love all greens …so healthy & versatile . At the moment ,I would have to say I’m in love with arugula . I have been making a quick snack/meal which is so fresh & tasty 🙂 Simply, arugula, garlic, cherry tomatoes, mashed avocado ,chia seeds, sea veg, Himalayan salt & dukkah (chilli,paprika,turmeric, cumin with chopped nuts & seeds ) ….divine 🙂
