Instead of one recipe today, how about an entire book? Because I took the photos for Wild About Greens, Nava Atlas’ brilliant new cookbook, her editor was kind enough to send me several copies, and I would like to pass two of those books on to a couple of my faithful readers. So look below for details on how you can enter to win.

But first, some photos of the book:

Wild About Greens

When you take photos for a book, you never know how they’ll look; the designers crop them to fit their layout and design and sometimes even flip them so that they are mirror images of the way you actually shot them. The designers of Wild About Greens did a fantastic job of editing my photos, making them look better than I ever expected.

My photos are in a color insert in the middle of the book, but Nava’s lovely illustrations grace almost every page. One of my favorite sections is the introduction to leafy greens which gives information on 18 different types of greens.

But my very favorite page? That would have to be the title page!

Sometimes I thicken the sauce with a corn starch slurry for a thicker coating over my rice.” Congratulations, Sheila! Baby bok choy is one of my favorites, too.

    I don’t think I could choose just one green, but lately I’ve been craving baby spinach leaves. I eat them in smoothies and stir fries. Would love to get some new recipes for greens!

    I love arugula. So good in pasta. I also love arugula salad with lemon, a little olive oil and salt and pepper. Yum!

    I love Kale and potatoes!!! Mash some potatoes with soy milk, add seasoning to taste, and a little chopped onion. Stir in lightly steamed kale, as much as you like, and some nutritional yeast. Bake in a casserole dish at 350 degrees for about 30 minutes. Delicious with veggie sausages!!!

    My favorite greens recipe is also they first way I ever had kale. A fresh kale salad of washed stemmed leaves with tomato and avacado hand tosed to crush the avacado into a dressing. salty to taste and a wedge of lemon.

    Kale is my favorite and I like to make the kale chips,but I also like it as a raw salad. Beautiful pictures, you make the food look so good!

    I love kale–seeing it wilt when massaged with dressing is just awesome! I also really love my collard greens. Anything I would put in a flour-based wrap, I’ll try in a collard!

    I absolutely adore all varieties of kale. I mostly just throw it in a smoothie but sometimes I’ll make a kale salad or kale soup.

    So difficult to pick a favorite but if I have to pick…. KALE!!! I love kale just about anyway you can fix it. I juice it, sautee it, stir fry,soup and chips! It is nature’s most perfect food. I have a t-shirt to share my favorite green…. EAT MORE KALE!

    First, thank you for not leaving out folks who don’t have FB accounts.

    Second:

    KALE!!! Ripped/chopped, “sauteed” in tamari then add a little mirin, covere and steam to finish. Takes maybe 7 minutes total cooking time (depending on the stems, if you don’t remove them beforehand). SO YUMMY!

    Kale is my favorite. I saute it with water, Braggs, and onion powder. I eat as is or as a base for a meal, such as chili.

    Lacinato or dinosaur kale. I love it in everything, but sautéed in olive pile, onions, garlic, veggie ham, red bell pepper and a splash of tamari and apple cider vinegar is my absolute favorite.

    I would have to say spinach since I use it most often. Right now it’s time for strawberry spinach salad! Hmm… or brussel sprouts with garlic. Your pictures are beautiful good job!!

    My favorite leafy green is Kale and we have been enjoying it as a salad after watching Forks over Knives.

    Just “massage” some chopped kale with avocado and lemon and it is ready to go and delicious! Add some lemon zest just before serving, hmmmm!

    I love all greens but would have to say kale, either blended in my smoothies, sauteed in a stir fry, or in a salad with avocado and fresh lime.

    I just love your website!!! I’ve been a vegetarian for 20+ yrs…started eating vegan this past month or so. I absolutely love kale!!! it is my favorite green leafy veg. My husband and I use kale in our smoothies, our casseroles, and chillis. We also love it in our salads and stir fries!!!! It’s delicious!

    Fav green: simple chard. Just sauteed in a little water with garlic and add balsamic vinegar/lemon juice. Easy and yummy!

    I try to love them all, but right now baby bok choy in vegan pho is my favorite because my son will eat it. Every last bite!…I need to search your site for a version I can make at home!

    I always have chard in my garden, and I love to put it in my “morning soup”: lots of veggies, brown rice noodles or udon, tofu, veggie broth…. It is a great breakfast.

    Kale, tossed in olive oil and a dash of sea salt, then oven roasted until crispy. Yum!
