Instead of one recipe today, how about an entire book? Because I took the photos for Wild About Greens, Nava Atlas’ brilliant new cookbook, her editor was kind enough to send me several copies, and I would like to pass two of those books on to a couple of my faithful readers. So look below for details on how you can enter to win.
But first, some photos of the book:
When you take photos for a book, you never know how they’ll look; the designers crop them to fit their layout and design and sometimes even flip them so that they are mirror images of the way you actually shot them. The designers of Wild About Greens did a fantastic job of editing my photos, making them look better than I ever expected.
My photos are in a color insert in the middle of the book, but Nava’s lovely illustrations grace almost every page. One of my favorite sections is the introduction to leafy greens which gives information on 18 different types of greens.
But my very favorite page? That would have to be the title page!

June 18, 2012 at 3:37 pmI love baby kale….so I grow lots of it. I cut the tops of the plants off when they are about 8″ tall. I cut within about 1″ of the ground. The plants grow back and a month later I can do it again. I eat the baby kale braised, steamed, boiled, and as munchies raw out of hand. I grow Dinosaur Kale, Lacianato, Ragged Jack, I love love love love baby kale!!!

June 18, 2012 at 3:38 pmI’m another Kale fan. I just love everything about it…it’s size, shape, colour and texture. I make it into chips in a slow oven sprinkled with awesome garlic powder which a friend grows & grinds. Then I use the chips to add flavour and nutrition to dishes or we just much on the chips. Kale is great in smoothies too.

I actually prefer them raw, believe it or not, in a mixed salad with kale and arugula, mounded high with cherry tomatoes, carrots, celery, sunflower seeds, and raisins! Fave #2 is brussel sprouts, roasted in veggie broth (or a small spritz of oil) with crushed garlic, Braggs, and Southern Flavor’s cajun seasonings! YUM!

I love kale, and would love to have this book! I like to make a salad with lemon juice, olive oil(just a touch), dried cranberries, and pine nuts. It is awesome, and everyone that has tried it loved it even kids.

We almost always have it in the house as a way to include iron-rich greens in our meals. Moreover, it’s my husband’s favorite, so if I can sneak spinach onto his sandwiches, I’ll do it!

June 18, 2012 at 3:41 pmMy favorite greens… sautéed kale in a wrap with saucy black-eyed peas, sautéed red pepper strips, and marinated tofu. The sauce is ginger, garlic, soy sauce, coconut milk, etc.

June 18, 2012 at 3:41 pmI.love.Kale. There are two ways I enjoy using kale, one is in my blueberry and kale smoothie. The other way I like to prepare kale is with orzo rice boiled in turmeric. I saute garlic with the kale in a little bit of coconut oil and season it with sea salt and a little pepper, I squeeze fresh lemon juice once I toss together the kale and orzo together. It is so delicious, light, colorful and simple.

June 18, 2012 at 3:42 pmOh MY!!! How does one choose just one? We LOVE greens at our house. We grow Chard, Arugula, Spinach and Beets, from which we also use the greens! Currently, I’d have to say my favorite is Arugula with it’s nutty peppery flavor. I use it on and in everything from sandwiches to salads to green smoothies. I especially like your recipe for Potato Salad with Arugula!
