Instead of one recipe today, how about an entire book? Because I took the photos for Wild About Greens, Nava Atlas’ brilliant new cookbook, her editor was kind enough to send me several copies, and I would like to pass two of those books on to a couple of my faithful readers. So look below for details on how you can enter to win.

But first, some photos of the book:

When you take photos for a book, you never know how they’ll look; the designers crop them to fit their layout and design and sometimes even flip them so that they are mirror images of the way you actually shot them. The designers of Wild About Greens did a fantastic job of editing my photos, making them look better than I ever expected.

My photos are in a color insert in the middle of the book, but Nava’s lovely illustrations grace almost every page. One of my favorite sections is the introduction to leafy greens which gives information on 18 different types of greens.

But my very favorite page? That would have to be the title page!

Sometimes I thicken the sauce with a corn starch slurry for a thicker coating over my rice.” Congratulations, Sheila! Baby bok choy is one of my favorites, too.

    While I love all greens, my hands down favorite is spinach. It’s so versatile! My favorite way to prepare it is to make spinach saag.

    I don’t know that I could possibly choose a favorite green but if I had to it would probably be spinach. I love the versatility of it and use it in everything from salads, to smoothies, to pasta and pizza!

    Love your blog by the way! It’s become on of my favorites!

    Kale! Just barely steamed until it turns bright green and collapses a little, eaten plain – sweet, simple and perfect!

    Kale! I love to make Indian dishes with Kale! Especially chickpeas with kale! Mmmm! Kale chips also rock my world! :o)

    I love baby kale….so I grow lots of it. I cut the tops of the plants off when they are about 8″ tall. I cut within about 1″ of the ground. The plants grow back and a month later I can do it again. I eat the baby kale braised, steamed, boiled, and as munchies raw out of hand. I grow Dinosaur Kale, Lacianato, Ragged Jack, I love love love love baby kale!!!

    I’m a BIG fan of kale in all its preparations. Lately, though, I have been craving something crunchy, so I have been making oil-free kale chips with lime, garlic and sea salt. Super fast and definitely fills a craving!

    I love kale – Kale chips, in smoothies, sauteed with dates and pecans – there are so many options! I look forward to learning appreciation for the many other leafy greens!

    I’m another Kale fan. I just love everything about it…it’s size, shape, colour and texture. I make it into chips in a slow oven sprinkled with awesome garlic powder which a friend grows & grinds. Then I use the chips to add flavour and nutrition to dishes or we just much on the chips. Kale is great in smoothies too.

    Hmmm it is tough to choose just one but I am a sucker for crunchy texture so I’d have to say kale chips are the all-time favorite…any flavor!

    I love all greens but my favorite is Bok Choy either steamed with some garlic and lemon juice or lightly grilled. I hope I win the book!

    ah, swiss chard, baked in a pie with a sliced potato crust. not vegan, but I’m sure you could come up with a tofu/brewers yeast alternative!

    My favorite leafy green is mustard greens!! I actually prefer them raw, believe it or not, in a mixed salad with kale and arugula, mounded high with cherry tomatoes, carrots, celery, sunflower seeds, and raisins! Fave #2 is brussel sprouts, roasted in veggie broth (or a small spritz of oil) with crushed garlic, Braggs, and Southern Flavor’s cajun seasonings! YUM!

    I love lightly braised kale with a tangy garlic-miso dressing, a bit like the kale that Whole Foods has at many of their salad bars!

    Kale is my favorite. I basically steam with some onions, pepper (green, yellow or orange – whatever I have on hand) and some spices.

    I love kale, and would love to have this book! I like to make a salad with lemon juice, olive oil(just a touch), dried cranberries, and pine nuts. It is awesome, and everyone that has tried it loved it even kids.

    I started to love Kale, so have planted some in containers this spring. So far Kale chips, Kale in any soup, stir fried, I’m open to any Kale recipe and try to try them all! Your photos you posted in the book are so very life like…great job!

    My favorite leafy green is probably spinach. I put in on / in almost everything from sandwiches to pasta and salads to hummus. We almost always have it in the house as a way to include iron-rich greens in our meals. Moreover, it’s my husband’s favorite, so if I can sneak spinach onto his sandwiches, I’ll do it!

    We love brussel sprouts… just boil them up, add a touch of olive oil and balsamic vinegar and enjoy! (I’d love a copy of this book, because there are lots of great greens out there that I just don’t know how to prepare. Always learning and improving (I hope!)     This season, I’m loving Chard! I made a red lentil soup with green chard that was delicious, and a pasta and veggies saute with some golden chard. YUM!!

    My favorite greens… sautéed kale in a wrap with saucy black-eyed peas, sautéed red pepper strips, and marinated tofu. The sauce is ginger, garlic, soy sauce, coconut milk, etc.

    When we were recently in Rome, I had an arugula salad that included slices of steamed redskin potatoes, black olives, red onion, capers, and tomatoes. So delicious! It was my favorite salad of the trip.

    I.love.Kale. There are two ways I enjoy using kale, one is in my blueberry and kale smoothie. The other way I like to prepare kale is with orzo rice boiled in turmeric. I saute garlic with the kale in a little bit of coconut oil and season it with sea salt and a little pepper, I squeeze fresh lemon juice once I toss together the kale and orzo together. It is so delicious, light, colorful and simple.

    Oh MY!!! How does one choose just one? We LOVE greens at our house. We grow Chard, Arugula, Spinach and Beets, from which we also use the greens! Currently, I’d have to say my favorite is Arugula with it’s nutty peppery flavor. I use it on and in everything from sandwiches to salads to green smoothies. I especially like your recipe for Potato Salad with Arugula!
