Instead of one recipe today, how about an entire book? Because I took the photos for Wild About Greens, Nava Atlas’ brilliant new cookbook, her editor was kind enough to send me several copies, and I would like to pass two of those books on to a couple of my faithful readers. So look below for details on how you can enter to win.
But first, some photos of the book:
When you take photos for a book, you never know how they’ll look; the designers crop them to fit their layout and design and sometimes even flip them so that they are mirror images of the way you actually shot them. The designers of Wild About Greens did a fantastic job of editing my photos, making them look better than I ever expected.
My photos are in a color insert in the middle of the book, but Nava’s lovely illustrations grace almost every page. One of my favorite sections is the introduction to leafy greens which gives information on 18 different types of greens.
But my very favorite page? That would have to be the title page!

June 18, 2012 at 4:53 pmThese days, my favorite green is arugula, and I pretty much love it every way, but the easiest/best is dressed simply in a salad, or as the greens in a sandwich. The peppery bite just makes every bite fantastic.

My favorite green veggie is kale. I sauté plenty of roughly chopped garlic in a little virgin coconut oil until it’s toasty, add chopped raw kale with a little water and steam it. Then, I add orange zest, sea salt, and chili flakes. If I’m feeling wild, sometimes I’ll even throw in some dried currants before steaming. Absolutely amazing.

June 18, 2012 at 4:56 pmI love greens in any and every form! The one I eat most frequently is collard greens steamed in a pot with garlic until soft and then tossed with vinegar, hot sauce, and liquid smoke. Delicious!

June 18, 2012 at 5:03 pmGrowing up, my favorite greens were spinach and broccoli (I was a weird kid, and destined to be an herbivore!). Lately, kale has stolen the spotlight. I love it steam-sauteed in veg broth with garlic and chipotle flakes; I love it steam-sauteed and then mixed into marinara sauce over pasta; and I love it simply steamed and tossed with some balsamic vinegar (also my favorite way to eat spinach)!

June 18, 2012 at 5:03 pmMy favorite summer green is swiss chard. I chop it, put a little olive oil in a skillet and heat. Add two cloves of garlic and cook for one minte add the greens and cook until wilted. Dress with red wine vinegar and serve.

I just came across an enchilada recipe from Healthy Girl’s Kitchen that uses a combination of kale, spinach and mushrooms as the main ingredients of the dish, layered with corn tortillas and a tomatillo salsa. It’s topped with a Roasted Poblano Cream Sauce (cashew-based) and is amazing!

June 18, 2012 at 5:05 pmHow to choose…they are all so wonderful. I came late to greens. Well, I had them as a young child living with my Italian grandparents. But my mother married a navy man and we travelled far from New York, shopping mostly at commissary’s and the only greens to be had there was spinach in a can. Still can’t cook my spinach to that state! Later, very sick in my 20’s I met friends who got me to start eating veges again, straight from their garden. Oh, it was wonderful.
My favorite way to eat spinach is still wilted with a small clove of garlic, and finished with a squirt of lemon. Second favorite is what my mom always cooked, sauteed spinach with scrambled eggs and garlic. Great for breakfast, lunch or dinner. Hope I win the book!

June 18, 2012 at 5:05 pmWhat a great book! I run out of exciting ways to use the collards and kale that I always get in my CSA. My favorite leafy green is rainbow chard and I like it simply sauteed with some olive or coconut oil and garlic, salt, and red pepper flakes.

June 18, 2012 at 5:07 pmThis looks like a wonderful book. Baby pak Choy is our favorite. Just sauté with salt, pepper garlic and a little drizzle of sesame oil. Suddenly there are four people salivating, waiting for rice, salmon and greens. Healthy, you betcha. I grow our own year around.

June 18, 2012 at 5:09 pmI love red curly kale! (Although, in my humble opinion, its stems are purple, my favorite.) I adore the smell of the kale, which reminds me of old-fashioned roses. Before I put it in my daily green breakfast smoothie with baby spinach, I spend time smelling it. I ran out of kale last week and forgot to pick some up. When I made my smoothie with just spinach, it was sadly lacking! I had no idea just how much marvelous flavor the kale added – similar to it’s scent.

June 18, 2012 at 5:10 pmMy fave is Gai Lan. My mom grew in our garden when I was young. Before my boyfriend became vegan, I stir fried it with a little garlic, soy sauce and oyster sauce. Now, I do the same but with mushroom sauce instead of the oyster.

June 18, 2012 at 5:12 pmCurrently, my fav green is kale. I like to saute it in a bit of veggie broth with a bit of garlic. Once the kale is wilted and the veggie broth is reduced down, I top it with a small bit of vegan “butter” and some lemon juice.

June 18, 2012 at 5:13 pmMy favorite greens are kale and chard and believe it or not, parsley. I can eat parlsey just like it is. I love to put it chopped up on salads. I eat my husband’s parsley (garnish) at restaurants. I put kale, spinach and of course a whole bunch of parsley, some fresh ginger, 1/2 juice of a lemon, juice of 1 lime, 1 cup water, some berries or stone fruit (whatever I have on hand: blueberries, raspberries, strawberries or a combo of all) and a frozen banana with 1 cup ice and 1 packet of Stevia into my Vita Mix and give it a real whirl. What a great green, smoothie. I keep the rest in the refrig for the next day and the next day… unless my hubby drinks it first. Very healthy. and refreshing.
